Pasta with Bacon and Mushroom Sour Cream Sauce

  • Bacon, Mushroom, Sour Cream, and Pasta may not sound like it works, but it does! As they say, everything tastes better with bacon. Welcome back to the Cuban Redneck Kitchen, where today we are making one of my mid-week 30-minute dinners. I had just started to slice a chunk of smoked bacon I picked up at Publix for a Sunday brunch, and that's when I decided to record this super simple, mid-week 30-minute dinner. Those who know me personally often criticize that I am always cooking generic recipes on RUclips and that I never cook the stuff I make for them. I planned to make bacon winners for the kids and bacon burgers for the grown-ups on Sunday but also use some for dinner tonight.
    On the menu is a 𝐁𝐚𝐜𝐨𝐧 𝐚𝐧𝐝 𝐌𝐮𝐬𝐡𝐫𝐨𝐨𝐦 𝐒𝐨𝐮𝐫 𝐂𝐫𝐞𝐚𝐦 𝐏𝐚𝐬𝐭𝐚 𝐑𝐞𝐜𝐢𝐩𝐞 with 𝐀𝐢𝐫 𝐅𝐫𝐢𝐞𝐝 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 made in the 𝐈𝐧𝐬𝐭𝐚𝐧𝐭 𝐏𝐨𝐭. As I said earlier, this super simple recipe takes less than 30-minutes.
    As I said in the video, I am doing this is a chunk of 𝐬𝐦𝐨𝐤𝐞𝐝 𝐩𝐨𝐫𝐤 𝐛𝐚𝐜𝐨𝐧 for economic reasons. If you have a large party or gathering where you need a lot of bacon, this type of cut is often about ¼ the price of the pre-sliced variety. However, any bacon will do, including turkey bacon, which I am not a fan of, but it works for this recipe. Also, I am using the
    𝐌𝐚𝐤𝐢𝐧𝐠 𝐒𝐨𝐮𝐫 𝐂𝐫𝐞𝐚𝐦 𝐏𝐚𝐬𝐭𝐚 𝐰𝐢𝐭𝐡 𝐁𝐚𝐜𝐨𝐧 𝐚𝐧𝐝 𝐌𝐮𝐬𝐡𝐫𝐨𝐨𝐦
    The first thing we need to do is cook 2-3 slices of bacon over medium heat. We are trying to get these guys crispy while rendering as much fact as possible. That usually takes about 3-4 minutes per side. Once they start to look done, let's move the bacon to a small dish lined with a paper towel.
    We'll add about 1 ½ cups of sliced mushrooms to the same skillet and cook those for about 3-4 minutes or until they are soft and shrunken by about ½ of their original size. At this point, we can get to work on the pasta. I am only making two servings, so I'll be cooking 1-cup of whole wheat penne pasta for about 12-13 minutes.
    While the pasta is cooking, we can get started with the chicken. I am using two 8-9 ounce breast fillets seasoned with salt, pepper, and smoked paprika. These will go into the Instant Pot Dual with the air fryer lid for 10-minutes at 400 degrees.
    With both the pasta and the chicken going, we can start with the 𝐬𝐨𝐮𝐫 𝐜𝐫𝐞𝐚𝐦 𝐩𝐚𝐬𝐭𝐚 𝐬𝐚𝐮𝐜𝐞. In a small deep dish, deposit two tablespoons of grated parmesan cheese, two tablespoons of mayo, one tablespoon of garlic powder, and about 1/3 cup of sour cream (the light variety works as well!). Mix everything and set it aside.
    By this time, the pasta should be done or close to it. Before we drain it, we need to collect about a ½ of pasta water for the sour cream sauce. Please wait until the bell of the Instant Pot rings, and then turn off the burner, drain the pasta, and put it back in the saucepan. Let's gently add the sour cream and work it into the pasta in a folding motion. I am adding about three springs of green onion, these can be considered optional, but I think they give the pasta a pleasant bright taste. We'll follow that with about 80% the pasta water, the mushroom, and eventually the bacon bits. Make sure everything is well incorporated, and let it stand.
    Now, let's go back to the Instant Pot and cook the chicken an additional 3 minutes in broil mode. Once the bell of the Instant Pot rings, you are ready to serve. The cooking 𝐜𝐡𝐢𝐜𝐤𝐞𝐧 𝐢𝐧 𝐭𝐡𝐞 𝐈𝐧𝐬𝐭𝐚𝐧𝐭 𝐏𝐨𝐭 is based on the weight, but 12-13 minutes of cook time will put you in the ballpark. When you poke, it should feel firm, but you should use a thermometer when in doubt.
    With the chicken served, let's add the remaining pasta water to the pasta, give it one last stir, and serve.     I made something similar without the bacon the other night. I'm on keto losing weight, so i used skinny noodles. God i miss pasta 😆
    A tip from this fat NY Italian, take a couple of raw egg yolk, remove it from the heat, and mix them in at the end; it will make it very creamy like a carbonara.
