You can use stock cubes dissolved in 1 cup of water. Or use plain water but the flavor will be slightly mellowed • No oregano/parsley? You can use Italian herb mix, basil or rosemary also pair well with mushrooms • No heavy cream? Substitute with evaporated milk/half and half/fresh cream. The duration of cooking will need to be altered until it reaches a desirable consistency • No parmesan cheese? Any cheese that will melt smoothly without causing stringiness can be used. Alter the quantity as needed --------------------------------------------------- Tips: • Mushrooms need to be cooked until it's browned to release maximum flavor • Be weary of salt if used store-bought stock. Recipe review: I tried this recipe and it was best white sauce I've ever made 🤤🤤 thank you so much for this recipe!! Tips: * I cooked the mushrooms first, and then cooked the onions as mushroom takes the most time to cook. I like my onions translucent instead of brown so it's a personal preference * I didn't have stock so I just used the pasta water and it turned out fine * I think adding the cream really brings this recipe together so try not to skip it * I added a lot of sliced garlic and also added some garlic powder coz I love it. As for herbs and spices - I added some oregano, chili flakes, pepper powder coz that's what I had on hand. I added this sauce to boiled fusilli pasta! And it amazingly delicious 😍

This sauce looks heavenly! The only thing I would do is add your drained pasta to the actual sauce in the pan, then toss it around & simmering very low for just a moment or two, as this really coats the pasta and helps it absorb just slightly. Thanks for sharing!

I am an awful cook. Until now nothing I've made was actually good, just meh. I have tried this recipe and it was 100% PERFECT! I am so happy! I've also added bacon with the mushrooms and it was DELICIOUS! Only thing is that I've made too much pasta for it. Will definitely make a little less next time to have more sauce.

I make very similar sauce for chicken breast. Instead of broth I add spoonful of mustard. It might sound weird, but mustard gives this pretty neutral tasting sauce a nice flavor kick.

Here in New Zealand this is one of my favorite breakfasts. I go to one bistro that uses a small amount of blue cheese in the sauce, and slivers of Parmesan on top. They also serve it over ciabatta toast with crispy bacon and a poached egg. Heavan!

All the comments here are true. Even I was surprised how great the mushroom sauce turned out to be. The sauce mixed with fusilli pasta paired with sauteed vegetables was heavenly. I followed substitutes that worked for others. Tips: 1. Follow her cooking method to the end. It's bound to give you an amazing result. 2. Cook mushrooms first onions later with butter + olive oil. Mushrooms taste great with butter (try butter garlic mushrooms) 3. I like veggies. So I further added capsicums, broccoli, green chilies with my mushrooms before the broth. 4. You can use pasta water as a broth substitute. No issues. Start with less water. 5. I used Amul fresh cream, with a dollop of cheese to get the consistency. Don't skip either the cream or cheese. 6. Do frequent tasting for salt, spice, and seasonings. The recipe is simple in flavor so you need to keep the balance. When the sauce is just about thick enough where it can be mixed, then pour over the boiled pasta and cook it all a little more. Enjoy.
JUST MADE THIS AND IT WAS AMAZINGGGG, first time cooking for myself and my dad but honestly it was so flavorful. I swapped out the cheese for pecorino romano which was beautiful and u can always use some pasta water to thin out the sauce later ❤

just made this. I didn't have stock so added milk, pasta water & onion powder. Also didn't have parsley, so only added dried oregano and lots of fresh ground pepper . It was quick, easy and so sooo delicious!!

That looks really good . I normally blend a can of mushrooms with the chicken brouth mixed with garlic cream and a piece of jack fruit . Then add to fresh mushrooms mixed with unions . Gets really creamy

@ hahah good luck with that! :) And guess what? So did I 😂 I was hungry and added way too much cream and noodles. So here's a suggestion - let the mushroom and the noodles be in almost the same proportion. Adding too much of the noodles will overpower the taste of the yummy mushrooms
i made this last night and in my personal opinion i wouldn’t use as much garlic as in the video again. it was overpowering for me. i used less than in the video even and it was still too much. so if you’re sensitive to garlic, watch out for that. with that being said i’ll be making it again, just more aligned with my personal tastes. thanks!
@justin king looks to me like the onions burned. I wouldn't want that. I think I would saute the mushrooms in the chicken stock so they shrink up then add the onion and garlic.

At 1:37 just before putting the broth in, I've added 1/2 tbs of flour to make a kind of roux because I didn't wanted to add cheese. It was perfect!

Low Carb deliciousness. A sprig of fresh thyme or rosemary or both is nice in there too and some white wine is also a great addition.

Love the simplicity of it , great taste , made a great meal for a romantic dinner for two .
End product looked great but never wash mushrooms in water. Wipe them with dry paper. They already contain a lot of water and don’t need any more👍
You have to, they are dirty.
@Lapinettepetitbébé if you knew anything about mycology, you'd know that's not the case.
A simple brushing is all that is required if the mushrooms are sautéed.

And guess what? So did I 😂 I was hungry and added way too much cream and noodles. So here's a suggestion - let the mushroom and the noodles be in almost the same proportion. Adding too much of the noodles will overpower the taste of the yummy mushrooms

i made this last night and in my personal opinion i wouldn’t use as much garlic as in the video again. it was overpowering for me. i used less than in the video even and it was still too much. so if you’re sensitive to garlic, watch out for that. with that being said i’ll be making it again, just more aligned with my personal tastes. thanks!

@justin king looks to me like the onions burned. I wouldn't want that. I think I would saute the mushrooms in the chicken stock so they shrink up then add the onion and garlic.
