Try tasty *fats* as a replacement for sweeteners in coffee.
The more pure and fresh the fat the better.
And they will not spike your blood sugar!
Examples are:
*Coconut Oil*
*Ghee* (only the fat from butter) make it yourself when butter is cheap with flavouring like cinnamon and cloves 😊
Add coffee spices instead of sweetener (Polyphenol rich spices like cinnamon or cocoa powder but just little amounts for taste because of the oxalic acid which is pretty high in them and binds minerals)
Another Tip is to try „softer“ water. Hard water binds Acid and flavour.

Coffee is up there with strawberries as one of the things we must must buy organic. What about Instant vs self-ground ?? Also, why did you mention mold? I keep all things coffee in the freezer after opening to retard mold growth.
Yes, the coffee should stay dry.
Standard electric coffee grinders are very cheap and fast there is no excuse for buying powder which is waste of flavour, freshness and because of the mentioned mold problem.
When you buy beans, you can check them like roasting date, how dark they are, how much they are damaged (mold) or whole. Once I ground freshly roasted beans myself since a few month I never went back.
You have to find the beans you really like though.
My favourites are Lavazza Espresso cremoso beans. Good Quality (recent third party analasis, too!) and they taste like chocolate 😊

Hello any advice about tea? I live in the UK and drink 5-6 mugs a day. I do not like green tea I prefer it strong and black and like Indian tea. I have seen channels discussing green tea but none regarding black tea so I presume it is not as healthy but it is a drink I can take without milk or sweeteners.
