Raspberry French Macarons with White Chocolate Raspberry Ganache | French Meringue Method
This is the easiest and most fool-proof macarons recipe using french meringue technique. the perfect macarons recipe for beginners!
The raspberry ganache is so delicious and you can use in many other recipes!

Recipe:
White Chocolate Raspberry Ganache:(I used double the ingredients in the video, and froze the half for another recipe)
250g White Chocolate (1 Cup)
190g Raspberry Puree (2/3 Cup) + 25g Sugar (2tbsp)
Or: 200g Frozen Raspberries (3/4 Cups) + 25g Sugar (2tbsp) + 2 tbsp Water
Macarons:
56g Egg Whites
75g White Sugar
75g Icing Sugar
75g Almond Flour
Unfortunately, for making macarons, cups measurements are not so reliable as it has to be very exact.

I just made these and they were very good! I've tried making macarons before but they've never worked out for me. So I made sure to follow everything you said, especially about letting eggs sit even overnight, and they came out perfectly! Everybody loves them at home. I'm going to try making chocolate ones next, and then lemon after that :)

Indeed it’s the ganache has the flavor the shells taste like classic macarons. If you want a stronger flavor you can pipe a tiny amount of raspberry jelly in the center in addition to the ganache. 💕

Give it time to set in the fridge and it will harden, as long as you have used good quality white chocolate do not worry about it just allow it to set, even overnight if needed.. I hope this helps, let me know ❤
Could I use rasberry jam instead of raspberries
Hi, sorry for the late reply! I personally never tried this ganach with raspberry jam instead of raspberries but I'm sure it will work, just don't ad the sugar. Simply mix the white chocolate and the raspberry jam. I would heat the raspberry jam until it's runny, wait for it to slightly cool before you add the white chocolate. Jam tends to heat a lot so if you add the chocolate rigth away it will burn. I hope this helps! much love ❤
What can I use if I don’t have a food processor
sorry for the very late reply.. you can buy already fine ground almond and powder sugar or buy ready tant pour tant, which is a finely ground almond and powder sugar in same amounts, ready to add to the meringue. Alternatively keep sieving until you get rid of all the thick pieces. I hope this helps 💕
