It's optional. For this recipe, you can rinse them with water to clean out any excess blood and bone chips, then pat really dry with paper towel. If you are making soup with oxtails, then I would recommend pre-soaking them in a bowl of water for 30 minutes to get the purest flavour out of the meat and bones.

Wow you are so lucky you can get such big beef tails. I think our cattle is slaughtered younger so all the tails are much smaller. But still delicious.
