Vaali Ambat (Mangalore Spinach Curry) is one of the most favorite curries in traditional Konkani GSB cuisine. It is also prepared in various forms in areas of Karnataka, Kerala and Maharashtra.
Spinach has a good nutritional content in form of iron, magnesium, manganese, folate and other vitamins.
There are various varieties of Spinach all over the world. We are using Vaali or Mangalore Spinach locally called Basale Soppu (ಬಸಳೆ ಸೊಪ್ಪು) or Malabar Spinach elsewhere.
Ingredients - Serves 10-15
Tori dali (Tur dal) - 1/2 Glass
Vaali (Mangaluru Spinach) - 1 Big Bunch
Soyi (Grated coconut) - 1/2 no
Ramnad (Roasted Chilli) - 10 no
Byadgi (Roasted Chilli) - 5 no
Chincham (Tamarind) - Lemon size
Piyavu (Onion) - 2 no
Salt - As per taste
For Tadka
Piyavu (Onion) - As per taste
Narlel tel (Coconut oil) - 1 Tbsp
