Greg, A really good podcast right about now would be one on which seeds have. Good chance of over wintering in or climate. So I know garlic, parsnips and tomatillos. What else? Maybe also go into whether or not they need to be covered by additional mulch etc. Would be great info to have :)
So, refrigerate after a week or so? I expect they'll keep for up to a year, but I would probably use them up quick. Adding them to the spaghetti sauce in the last few minutes of cooking would be a great idea, giving it a fresh flavor 😋
Fermented tomatoes are so delicious! I will use a version of your recipe. The only way i've made them is with sliced tomatoes, pink or sea salt and water. (Perhaps with some basil.) I just push them down once daily and leave on the countertop for about a week. Your idea of using carrot is ingenious. How about using natural vinegar with the "mother" in it? Once you've tried fermented tomatoes, no canned ones will ever be the same! Thank you :)
Thanks for the video! My housemate always gets a ton of tomatoes and other vegetables from the local co-op, but a bunch goes to waste because we can't use it before it goes bad. This might be a good solution for storing that excess. Have you done this with larger tomatoes, cut into halves or quarters so they can fit in the jar, or does that generate too many floaters?

You can do that as well if the vinegar has that property. I always find that it works fine with just what's already in the tomato.
I have seeds which came out of a tomato floating to the top alongside my weight, is that gonna ruin my batch? Can I open it up and take them off?
floaters are never good - scoop them out with a sterilized utensil.

I've never done it - but I've seen other RUclips videos of people doing it that way. Give it a try and see what happens I guess
