Use the classic Magnum or N.Brewer at the beginning and Spalter in the end. Go for Carafa II . A very prominent caramell sweetness is not a good thing for Altbiere. My ultra tested way to go: 60% Pilsner, 36% Munich, 3% Caramunich 3 , 1% Carafa II . You nailed the yeast. For step mash, go for 55 celsius first and 63C in the end. Break the mash with 78C for 1 minute before sparging. Enjoy.

I've actually never had an Alt beer yet, but now I want to brew one because it sounds like it's slightly similar to an American style Scotch Ale, which is my favorite style.
Even though I'm from Germany I almost never see Alt in stores. So by the description I was hyped but everytime I got at least on in bottles I was disappointed. Have to check out Düsseldorf I guess. Thx for your recipe!
