  • Ordering pizza by weight may be a new concept to Los Angeles, but this Roman-style pizza has been around for decades. When Nancy Silverton and Matt Molina decided to open Triple Beam Pizza, they wanted to share their love of this crackly, chewy pizza covered in warm potatoes and rosemary, with the people of California.

    Damn good looking pizza. I've been to Forno Campo de Fiori in Rome that Matt mentions @4:40. Very well known and deserves the hype I feel. It would be cool if this style (pizza al taglio) catches on in the states.

      Used to subsist on Forno as a student in Rome! Eater's Dining on a Dime did a video about Forno a few months ago.

    pizza by the weight is an excellent way to serve fast food....

    a dollar plus an oz is crazy expensive. I live in Chicago and we have Bonci here its about .50 cents an ounce for the marg.

      that's because it's chicago. If i'm at the windy city in illinois, I'm buying a deep dish pie if i'm getting pizza because that's what the area is known for.
      LA is hella expensive too so it doesn't help much in that department either.

    Stop using blow torches on food! They do this at sushi places and you can taste the butane gas all over it. Gross. Pop it in the broiler for a moment for crissakes.

      Alot of amazing sushi joints torch their nigiri. But as stated above, if you're tasting butane, they're doing it wrong.

      +i2h A properly trained sushi master (or anyone with enough experience actually) would know the correct fuel to oxygen ratio on the torch as well as the distance between flame and fish to avoid the butane taste.

    Traditional, actual Italian pizza does NOT have sauce on it. I don't know why so many people got stuck on the sauce, but if you just watch some videos right here on RUclips, you can see a lot of people eating all sorts of pizza in Italy. And it usually has no sauce.
    It's mindboggling how incredibly ignorant people can be when they have so much knowledge at their fingertips.

      Dude you have no idea what you're talking about lmao. There are lots of kinds of pizza in Italy, and a lot of it has sauce. Ever heard of the two most classic types of pizza, pizza margherita and pizza marinara? Both have sauce!
      It's one thing to be wrong, and it's another thing to be pretentious and condescending while making your false claims. No Italian person would agree with a thing you've said. And before you or anyone questions me I have actually eaten a ton of pizza in Italy. Almost all of it had sauce.

    It looks like good pizza but as expected in a place like LA it's insanely overpriced. If we do the math with the average large pizza weighing out to roughly 2 lb, you're looking at $30 minimum for the same amount of food from this place. I don't care if you put white truffle shit on it, your pizza is not worth that much. Especially when it's been sitting under a hot lamp for who knows how long.

      Well, I saw no evidence that their dough or toppings are any fresher or higher quality than a zillion other pizzerias. But odd shapes, throwing together odd combinations of toppings, and selling by the pound are gimmicks. The reviews say it is expensive ($11-$30 for pizza?), and the reviews of the pizza itself are mixed. I don't live there, and I will never eat there so what does my opinion mean? But I am a pizza traditionalist, and I have no interest in
      these types of needless innovations. .

      they're not innovative though...maybe to us in the states, but most of these techniques, shapes and topping combinations are used in italy and rome.
      Some places do weight pricing as well but it's not standard, so I think they really should standardize their prices if they want a more open reception.
