You should listen to the original movie soundtrack of one of these A.R. Rehman’s composition and you’d realise how complicated the sound arrangement is. Live performances are great but do try the soundtrack once to experience the nuances. His movie albums like Lagan, Taal, Rangeela, and million more are celebrated in India.

Ik you guy's like live performances and that's awesome, but try reacting to the original version as well.... Those are really detailed and you can understand different instruments and notes better....for this song and Urvashi as well(the last A.R Rahman song that you reacted to)....as a matter of fact all the songs you reacted to till now have their original versions...give them a try too.
Also react to Amit Trivedi Coke studio songs...they are simply awesome!!
And FYI - A.R is his initials not his name... It's a long name "Allah Rakha Rahman" so simply A.R. Rahman

This song was originally sung by another legend Lata Mangeshkar. She had been singing for over 7 decades and has an world record of singing atleast 25,000 songs by 1974 in 20 different languages (it might've crossed atleast 50,000 by now). Her voice is so flawless that it is compared to the chime of a bell, she's also called as "Saraswati", who is an Hindu goddess of music and knowledge.
Even though this Berkley ensemble version of jiya jale is an absolute genius piece it is nothing compared to the original sung by Lata ji, she has taken this song to another level entirely.

at the start, the guy is hitting the thin metal plate on an instrument called "morchang". You keep the instrument in your mouth gripping the circular body and hit the thin string like metal to make the sound he is making. It is a fascinating instrument, I wish youtube allowed me to post a picture here. It looks beautiful. 😍😍

That musical instrument that you were surprised about, is called Morsing...largely used in Carnatic classical music.
