What about Garm Bel Iblis? He was one of the key figures of the Alliance, important enough to have a brief appearance in The Force Unleashed videogame. I don't know if he's still considered canon, but he was a supporting character in Timothy Zahn's "Heir to the Empire" series, and with some characters from that making their way into the EU (Thrawn and Pellaeon, for instance), I'll be surprised if we don't see or hear about him.
If the Empire kept seizing farmlands and forced farmers to become miners, where did they get raw products to make rations and other foodstuffs to satisfying the hungry mouths of the Imperial officers and the Stormtroopers?
The Ashoka novel is about that! They grow a lab made food product that yields a lot of food at once but drains the fields of all nutrients after a few harvests

I would love to see a video of exactly what The Creed is/was for The Children Of The Watch. Between seasons 3 & 4 would be the perfect time to explore this.
If I play it at all, it will also be the story. A big problem I had with the Fallen Order game was that many things in the game were precision tasks which I had to perform with the equivalent of austronaut gloves

Worst part is they didnt want to do it but had their hands forced by kira, because she wanted them to wipe out all criminal empires. Even her own. all the while starting fights with them so as to destabilize the empire and lead to their destruction as well. She did a palpatine but backwards as she had all power at the start of the war and used that power to burn everything down to the ground
So I loved Jedi Fallen Order, and I'm sure I'll love this game, and I like how Star Wars media has been focusing on the period between episodes 3 and 4. However, I do feel like the seriousness and scope of the Purge in episode 3 is being lessened little by little. In episode 4, it's made quite clear that the Jedi were all wiped out, and so when the audience learns that Obi-Wan and Yoda are masters that survived the Purge, it allows those two remaining Jedi to be our window into the Old Republic, and we rely on them for our knowledge about what happened to the Jedi. It adds to the mysteriousness of the Jedi, and it really drives home just how thorough and evil and relentless Vader and Palpatine were in eradicating them. But now, Disney keeps saying "Oh actually, THIS Jedi was alive also...AND this one...oh and THAT ONE too...oh wait...forgot about this one over here! Oh and actually, there was a whole underground railroad for Jedi to escape form the Purge! Hell, dozens of Jedi survived!! You get a Jedi, you get a Jedi, we all get a Jedi!" Now, at least in my opinion, it actually makes vader and palpatine and the empire in general appear less efficient and fearsome, because they apparently did quite a shitty job at wiping out the Jedi
To me it makes sense because it parallels real life. A galaxy is pretty big and you can't wipe out a movement with people adjacent that sympathise with an order that has been known to be good guys for generations across the galaxy. The Underground Railroad for runaway slaves in the US south, WWII harboring escaping Jews as some examples. Furthermore, there are always going to be more curious force sensitives going forward to be trained, Cal Kestis was only a Padawan that became a Knight. There's always room for more to learn if even one remains, a Yoda or an Obi Wan.
Cal may not see it now but every strike, sabotage and act of defiance against the empire will inspire more to resist. To form cells that will go on to eventually unite into the alliance we all know and love.
It'd be nice instead of running from the main boss of the previous game that Cal fights his final boss that is the High Republic Jedi in the bacta tank
Keeping the spoilers to a minimum but based on the ending of Jedi Survivor I can see a third game in the Kestis saga taking place sometime after the first or second Death Star destruction will have Cal up against a Grand Moff either as the empire doubles down or the Grand Moff tries to carve out his own territory after the empire's collapse.
I'm also in the same camp regarding 3rd person games. One notable exception as far as Star Wars goes was Jedi Academy. Of course you could change it to first person, and I often did, but the motions and animations were just fantastic for the time.

BBY/ABY is time tracking system made for us, not for in-universe use. And they do have "standard cycle" or how it's called which is basically global time system for the entire galaxy, while local time is used, well, localy
I bet this guy was disappointed to find out Coruscant is one of the smallest places you go to, and every other planet still was barely populated and off in the wild. They want the story to be canon so it’d be hard to put Cal in familiar places during that time.
