I haven't had a chance to watch CGMatter's tutorial so I'm not sure the specific differences in this instance, but it mostly just comes down to personal preference and whatever works better for your project! The blender node system is amazing, there's just about an infinite amount of ways you can go about creating things.
Regarding the thumbnail, would you consider making videos on recreating (part of) that scene? Doing all of it would most likely take too long for a video series but it would surely be interesting and helpful to many people 🤔
