Two things that might help the "sinking chips" issue: 1. Put a thin layer of batter in the baking pans before stirring in the chips. 2. Toss the chips with a little bit of flour, lightly coating them, so the batter clings to them. (works for fruit in muffins too!)

I've never tried any chips in my banana bread. Usually just nuts. Not a chocolate fan but I might have to try butterscotch chips
