I tried the 3rd receipe it came out very nice! Thanks. I reduced sugar to 3/4 cups. Yr description says 1 1/2 cups flour but yr demonstration was 2 cups so i used 2 cups. I liked it cause no gadgets to use! Just simple and straight forward!
@fayeg3026 - I made #3 with reduced sugar, as well! I only used 1 1/2 C flour and it came out perfect! I baked it for 65 mins, but 60 would have left the bread a little less dry 😋

I’m from 🇺🇸 Texas , I buy the bags of bananas that are a bit more overripe than yours ! This works better when you mash , sweeter taste, plus I add chopped pecans to mine , I let mine get a bit brown on top ! I’ve switched over to buttermilk, my personal preference think it gives it a better taste ! If I don’t have buttermilk just regular I make it by adding lemon or vinegar!

Every one or two eggs, scrape the bowl, again to ensutre proper incorporation with the butter. The above steps mean it will be a fully mixed batter with a light texture before adding leavening. In the US, medium bananas are not generally available. So 5 Us bananas makes 2 loaves of banana bread.
4 super ripe bananas, mix all wet ingredients in Kitchenaid, including the banana chunks. I never bothered to cut and mash bananas - just break them into big chunks by hand and put them into the Kitchenaid. Then mix dry ingredients, just don’t overmix it to prevent gluten. Best banana bread ever.

I agree about the hand-held electric whisk - I lost quite a bit of butter and sugar that way. I'd already creamed it together with a spoon (the old fashioned way) for a short spell and it still flew away. Eventually I carried on with the electric whisk, cos I was too lazy to persevere with the spoon. However, prepare yourselves accordingly - ensure the butter is very, very soft. That will help a lot. I think there are too much added sugar, if you let the banana overripe, it will be sweeter. But I like the sour cream version but I’ll change the white sugar to the brown turbinado and I like nuts.
Bananas should be very ripe and the use of 3 different dry ingrieidents for different purposes, baking soda, flour and corn flour all will add to the texture. Buttermilk can also replace sour cream or yogurt

No, the sugar and soften butter need to be creamed with the electric beater, it does make a difference.

I noticed the variation in flour after I already made the recipe with 1/12 cups of. In the oven now!
I always beat the eggs with the sugar at any recipe. It helps to dissolve the sugar. Undisolved sugar flatten the bread/ cake.

You are measuring salt with an eating spoon. A measuring teaspoon is much smaller. That is why your banana bread tasted salty.

The absolute best banana bread recipe is from Southern Living. It's the Cream Cheese Banana Bread. Makes two loaves. Moist and never fails.
