I allow my bananas to ripen until the skin is almost black. I was taught by one of my elders that when you allow your babanas to ripen on your counter like that, the more sugars develop in the fruit. Works every time.
#1 seems the best. Many bananas and brown sugar just makes more sense, adding vanilla to it and brushing some butter on it as soon as it gets out of the over to give it a shiny wet look
Actually, I always cream the butter and then add the sugar. The butter should be room temperature to begin with (that's why it splattered & didn't work - hard butter is for pastry dough and is cut in not mixed). Start beating the soft butter until it lightens in color then gradually beat in the sugar - until fluffy. The texture will be mixed but look a little like clouds stacked on each other. Then the eggs are beaten in one at a time. The reason for that is so that each is fully incorporated with the butterfat. Every one or two eggs, scrape the bowl, again to ensutre proper incorporation with the butter. The above steps mean it will be a fully mixed batter with a light texture before adding leavening. In the US, medium bananas are not generally available. So 5 Us bananas makes 2 loaves of banana bread.

I tried the 3rd receipe it came out very nice! Thanks. I reduced sugar to 3/4 cups. Yr description says 1 1/2 cups flour but yr demonstration was 2 cups so i used 2 cups. I liked it cause no gadgets to use! Just simple and straight forward!
@fayeg3026 - I made #3 with reduced sugar, as well! I only used 1 1/2 C flour and it came out perfect! I baked it for 65 mins, but 60 would have left the bread a little less dry 😋
I'm watching from Jamaica and we usually mix the butter and sugar with mixer till it's fluffy. My way is similar to No. 1 banana bread but I add nuts to mine. Best recipe 👌

You can mush the butter and sugar together a bit before using a hand blender to cream the mixture. Creaming means the sugar has almost totally dissolved into the butter. Leaving it gritty affects the texture of the bread, and how the flour absorbs it. Sour cream or yogurt adds acidity and will make the dough tender, and help it to rise. You can go eggless by using baking powder and baking soda.
To swiftly bring chilled eggs to room temperature just add it/them to warm tap water letting them sit for 2-3 minutes. It’s a quick fix that makes the difference. 😊

I think there are too much added sugar, if you let the banana overripe, it will be sweeter. But I like the sour cream version but I’ll change the white sugar to the brown turbinado and I like nuts.

The best part to me is sour cream can be replaced with yogurt since I don’t use sour cream for anything. Buying a tub of sour cream to make one loaf of banana bread and throw the rest of it away is wasteful. Thanks for the recipe.

I always beat the eggs with the sugar at any recipe. It helps to dissolve the sugar. Undisolved sugar flatten the bread/ cake.

No, the sugar and soften butter need to be creamed with the electric beater, it does make a difference.

My banana bread recipe calls for mixtute of all purpose flour & whole wheat flour, a natural nutty taste without nuts! Very good & moist!

You are measuring salt with an eating spoon. A measuring teaspoon is much smaller. That is why your banana bread tasted salty.
