      Hey Mark. As we head towards 100 videos on our channel we have learned, as I'm sure you did a long time ago, sometimes you just have to film in locations that are not ideal for sound and/or light and you just have to make the best of what you get. Still a fantastic video that is, as always, up to your high standards. Uncarpeted empty rooms with concrete floors are going to echo. We dont mind!

      Turned out ok in spite of the echo. Sometimes you just film all the good stuff then record a voiceover, when the audio isn't ideal. Actually, the way you did this video, most of your facecam time you could have done in a different location.

      Love your setup. I would be worried the tables would get crowded with stuff lol. But it looks great and very efficient

    Mark, it’s nice to be back! I haven’t been on RUclips for the past few months, watching very many videos.
    I used to watch your videos every night, even if I’ve seen them. I just learn so much. I felt kind of empty and out of place not watching your videos. I know you don’t know who I am, you’ve replied to me several times, but watching you I really feel like I’m right there with you, as if you’re my friend.
    You’ve helped me get through a lot and I’ve learned so much from you. I’m taking horticulture technology at the technical/trade school where I live. As of now I’m doing plant materials, where I learn the scientific and common names of plants, how they grow, and how to identify them. In applied plant science I’m learning the basics of plant growth, doing lab experiments, and learning about the important structures and aspects to a plant.
    Im doing landscape management, learning how to manage a landscape, create a plan and a sketch, plant different plants, and fertilize beds, do turf grass, and irrigation.
    In soil science I’m learning everything you need to know on healthy soil. Soil tests, nutrients, bed prep, fertilization, organic matter.
    I’m Also learning greenhouse operations, how to build a greenhouse, situate it, important aspects, financial aspects, business, marketing, turnovers, etc.
    I’m learning a lot. You’ve really inspired me and have helped me get where I am, even though you don’t know who I am. Thanks Mark, and have a good one.

    I like your freezer. I have one of these. I got four pound bags of flour. Triple wrapped them and put them in the bottom of the freezer. They will keep for several years and make a nice way to fill up that void in the bottom of the freezer where things go to get freezer burned. I bought the flour on sale and during the pandemic, I always had flour to bake with. It's just an idea. I love it when you say Let's get into it. Makes me smile every time.

    Mark try going to Clarks Rubber and getting some blue foamstuff, it's only a centimetre thick or fifteen millimetres thick and it will deaden a lot of the noise from the pump because of the vibration damping!
    It works with aquatic air pumps so it should work for you.

      Or a yoga mat. Cut it to size with an electric knife. Probably much cheaper 👍

      Be careful! You cannot block the ventilation of the pump! Vacuum pumps throw of heat that has to be dissipated!

    Looks like your well on the way to what we here in Cajun Country call an “Outdoor Kitchen.” In other areas it’s called a canning kitchen. I think it’s called an outdoor kitchen because it’s where men use it for suppers and card games like poker or bourre’. Bourre’ is a card played in Cajun country

    Love the content. Would be good to see what things you freeze dry and which you and dehydrate and why you chose that option over the other. Keep up the great work

      Thanks Christopher! I do intend to show the difference but I can already give an indication from the few things I have made and that's "texture." Often (not always) dehydrated foods like strawberries, for example, turn out chewy and shrunken whereas I'm finding freeze-dried holds the shape and goes super crunchy. So, as a snack, a freeze-dried crunchy strawberry or banana slice is quite a treat on its own but if I wanted them on some cereal for breakfast I would probably prefer dehydrated for the chewy texture. Cheers :)

      the freeze dryer keeps 97% of enzymes and nutrition where the dehydrator is far less able to do this. The FD does not distort the look of the food or make it tough. It is far superior for long term food storage... up to 30 years and just tastes better and is more nutritious. It is almost exactly the same as original condition when rehydrated. It is extremely good without rehydrating for some foods. Fruits and Veggies can be more of a treat and crunchies on a salad or just snacking. I love corn, peaches, even canned! I love my FDryer. You can freeze dry a raw steak and rehydrate and put on the barbie 30 years later! Amazing...

    We live in Central Florida. We have the medium with the premium pump. It was suggested to put a fan on the pump to keep it from getting too hot. So we put a fan on both sides. One fan blows on the pump and freeze dryer. The other on the left side of the freeze dryer. Just make sure to have good air flow all around it. Having a freeze dryer is great. Looking forward to seeing more videos of your garden, harvest, and preserving. Thanks.

      I think you make a very good point! We can all tend to focus (and get pulled down) by the constant negative information highway and whilst it is good to stay informed to an extent we really don't need to be reminded about every bad thing that happens 24/7 as this can affect us directly and subconsciously and give an unrealistic impression that everything is collapsing around us when in reality it is not. Getting out into the garden and in nature reminds me of how beautiful the world is and my focus soon becomes about what I can grow or create. All the best with your Birdies beds - how exciting! :)

    Greetings from Ontario, 🇨🇦Canada. Absolutely love your set-up. I think for myself, the only thing I’d have done differently, if I had the privilege to do what you do, would be to buy a stand-up front loading freezer. That way, if I did want to freeze the trays ahead of time, I could place them on the freezers shelves. You are very blessed to have this ability. I wish you all the best & thank-you for your videos & sharing your knowledge. For someone who grew up not even knowing how to care for a house plant🪴, I have learned much over the years, but I find many of your ideas very practical & immensely helpful!!!     I love my venison jerky. I just use a flyscreen covered box and hang the meat on skewer and air dry in the shade. But hey I love the dehydration set up you have and all the options for fruit etc.

    Nice setup Mark, but I would be putting a magnetic strip on the wall above the second bench to put all your knives for cutting, as well as a funnel, spatula, dough scraper and any other metal tools you'd be using during the food prep. Additionally a shelf to hold a little propane burner and canning supplies just so you have all together and out of the kitchen, not heating it up during our crazy humid Queensland summers. Don't waste the opportunity... Go all out and make your food preparation station setup mindblowing! Go on.. make the interwebz denizens jealous... you know you want to :D

    I’ve been watching your videos on and off all day…starting with the “ how to grow garlic”. I grew it for the first time this year and was very happy with my harvest but would have liked my bulbs to have been bigger!! Thank you for the growing tips and for all the inspiration!!     Wasn't aware of those freeze dryers .. nice to know. I'm a little way away from being able to set myself up properly but something I've been ogling is a Bradley smoker. Smoking can make even average fish taste amazing and the Bradleys seem to take a lot of the fiddling out of the equation (some would call it skill).

      I'm waiting on my Freeze Dryer to arrive. It's going in my kitchen as my garage gets too hot and too cold so I hope it works well. If not, I may move into my dining room as it's just a wasted room in the house! ha

    Love your set up! Could you build an sound insulated box for the motor, maybe even piped through the wall to really quiet down the noise? Also an insulated box for parts of the machine to help keep it from absorbing the ambient hot air? If you so a little renovation on the area, with increased wiring, you may as well add a utility sink counter too! Tell your wife the money you save on food is paying for it!

    "Retired at 40" has recently uploaded a video comparing all 4 of the vacuum pumps - including the newest oil-less design - comparing price, noise and more.
    Worth a watch if you're considering buying a freeze dryer.

    I have one of those pump hose reels and I love it. I am older, and can not drag hundreds of feet of hose around, then wind it back up. It's better than a stair climber.

I have been researching freeze-drying, too, and I am curious to hear more about how yours is working out - produce that does (or doesn't) turn out well; the texture and taste when things are rehydrated; things like the bananas that can be eaten without rehydrating... anything you could share would be much appreciated.       I live on the Mornington Peninsula in Victoria and am interested in your freeze dryer , what brand is it and where did you buy it ? I have a dehydrator and use it quite a bit , mostly dehydrate livers , chicken skins and necks for my dog .

    Good morning, Mark! Ya know, back in the old days, many familes had a second kitchen. An "outdoor" kitchen as it was called, because it wasn't part of the main house. I can sure see why now. You just don't want to be doing a lot of stuff in the house for many reasons... Nice start to your "outdoor kitchen" 😊

      My aunt's outdoor kitchen was underneath a tree-in between her real outside kitchen and her house in rural Jamaica-real old country style! The food was always good.

    Haha totally agree with you on the dehydrated bananas 🍌. They are like eating lollies, but actually healthy. I could easily get through half a dozen bananas in a day because they are so easy to eat.

    do make sure, if you can, that the hose to the bucket does not sit in any of the evaping water. Also, you might try a wood block as a heat diffuser from the pump. the heat of the light will damage the dehydrator, maybe choose some wood or Foam sheet to block heat and light. LOVE what ya have done! God bless!

    wow wow wow! I wish i had a partner as handy as your wife has you! She is so Blessed! and you got boys to help! congratulations! If your FREEZER can get to -10F or -20F then you might be able to skip the pre-freeze process, but it does Aid in FREEZING if you pre-freeze. The manual should tell you, and check the temp that the freeze must be at in the vacuum process. I believe That's the key to a good batch, to get the "water" to turn from solid to vapor in the vacuum chamber instead from the solid-liquid-gas state. So far the banana's made me so hungry!

    Use the freezer to freeze your trays and it will take probably 1/2 the time to process your food. I have the same set up with the freezer. Get a second set of trays too! A great tip would be get those restaurant style black bottom/clear top Hefty food storagee trays to freeze your soups, stews and cooked meals in. This way you can freeze and stack them, they nest.
    then when time to FD them you just pop them out, set on a tray and they stay in portions to bag up in the end. I put 2-4 portions in one hefty storage container to freeze and it is a space saver for your freezer. You can stack your trays level by arranging the hefty containers under the trays.
    This will help with liquids if you don't use the hefty which I do not recommend. Eggs and milk and so on, messy if they spill and takes so much time if you don't freeze. I have had my FD, large and same pump as yours and I need to keep an eye on it. If it goes above 77 degrees Fahrenheit, it will slow the processing and possibly harm the motors. A fan right on the vent and moving the pump away from the FD will help keep it cool. However, placing a fan right on it, helps. I would suggest 2 fans, powerful ones! (Unless your garage is cooled. Then maybe still.) Keep a good eye on thee FD while in process. When you have so much food at risk of spoiling, you want to watch. Also, check your food for the texture of balsa wood. Dry and easy to break. Check each batch and each tray. If it is cold inside more dry time. If you do not get the food out with hot trays, since you won't know when it will be ready, Just leave it in for another entire final dry cycle. (2 hrs.) The reason is, the ice will impart more moisture so just to be sure, your trays should be HOT when you remove them! Any questions just reply. There are good FB groups for FDrying. Get into some! You can ask questions there. Good info. Happy for you, you will LOVE IT. Corn is especially like candy and fab. on salads! OH, getting a foodsaver to store in mason jars is amazing and pretty. Things you want to have out to eat like the bananas. You can use ox absorbers but just the food saver attachment to suck air out of the jars is amazing. Keeps for ever for slow eaters. Get it on the foodsaver website. It is only $25 for both lid sizes.Do not store long term in foodsaver bags. They don't work well for LONG term. Use mylar and ox absorbers. The best ox absorbers I found are the ones from LDS church. Cheaper and better for 100cc. Get ome 1/2 gal. mason jars and you can keep the family in FD fruit without fear of rehydrating with the foodsaver. (See Raincountry on YT for using a brake bleeder instead of foodsaver, but I would be surprised if you don't already have one!) Best to you!

    Hi Mark, You can cut the noise and echo in your garage considerably with Mass Loaded Vinyl (MLV) mounted to your walls, ceiling, and perhaps install cork flooring which is waterproof and adds some spring underneath your feet. I’ve of course got no idea where in Aussie you can get the MLV, but I did find an excellent source in the U.S. that offers the product in different weights. Of course this might add a little bit of insulation, but nothing like the sprayed-in foam. It would be a really good idea because keeping the space cool for the appliances will definitely make them last longer-especially with your tropical heat! Best wishes for years of freeze drying from Colorado!

    It's unfortunate that freeze dryers are so noisy; however, I admire your work space for preserving food 🐨🐨🐨👍

      The only noisy part is the vacuum pump.
      Since HarvestCraft freeze dryer is the first device with a vacuum pump that is not used in a factory or workshop, there was never demand for quiet versions.
      Maybe in the near future thanks to home freeze dryers like this one there will be demand for more quiet pumps and they will make one like that.

      One other guy in the comments here was saying you can pick up some Blue foamstuff to dampen the noise -- apparently this is common for air pumps for aquariums, so I'm sure theres tons of info on it on ye olde RUclips

      The oil-less pump he is using is actually the loudest of all the pumps they make. There are several people who have done noise tests of the assorted pumps on RUclips, and while this one requires less maintenance, it is a trade-off with cost and noise.
      The "premier" pump is quieter, as well as much less costly, and as mentioned by some of the other people here, placing the pump on a thick rubber pad will dampen much of the vibration. His garage is also a bit of an echo chamber, so the room itself will have an effect on how loud the process is.

    Hey, so i have been watching this channel for well over 3 years now, loving the content still.... but just a thought, to put this freeze drying to the test why not give the 30 day eat only what you produce challenge another go during the summer that you did a while back, just to gage how far you have come since then!

    Premier pump is the best. Oil less pump costs over twice as much, and are designed to break. You need oil going through the pump to keep the internals lubricated.

I'm always looking for more ways to preserve the fruits of the garden labor. I say a snippet of dehydrated tomatoes in jars with olive oil? That's a new one, love to see that.

    Ours is in the laundry also. We would love to put it in a pole barn, but we have to build it first. It is the five year plan. I love the table for yours. Perfect.
