Interesting usage of the leftover peels, we’ve been experimenting with freeze drying them and turning them into a powder for garnishes but this sounds really good too. 🍋
@@KevinKos it's a strange 'fruit'. It really is just the outside peel and the white pith inside. The outside peel is nearly identical to a lemon. Good for using anywhere you would use lemon peel.
I make my own version of limoncello by using fresh lemon peels in Everclear for about 6 weeks, then making oleo saccharine with fresh peels and adding enough water to get the desired proof. I am definitely going to try the spritz, give Lovro my regards, he makes an excellent Aviation! 🥂🍋

I am really liking the homemade liqueurs and bitters. I would like to more of those. Specifically a homemade Peychaud's Bitters. I love to use them in all my cocktails like your saline solution. They add a really great unique flavor to everything.
Keep up the homemade liqueurs just made the coconut rum and used all fresh coconut products that I made myself too. Tastes amazing compared to others. Some taste like tanning lotion. This is real coconut
Great idea! might try a mixed "citru-cello" combining lemon and grapefruit, maybe a bit of orange and palmsugar instead of white one to round out the grapefruit-bitterness. 🍋
I was curious what you were going to do with them. I've never made super juice but will have to give it a try. When I make limoncello I use fresh lemons and then I reserve some of the simple syrup and use those on the spent peels. The result is candied lemon peels which are a delicious snack or garnish.

Kevin, we really enjoy you videos, learning and trying new ideas. Question - do you have any suggestions on using the vacuum sealer for liquids? We always get some liquid pulled into the seal, which prevents a good seal, even during the second seal.

At our restobar we are using about 20 liter of lemon and lime juice a week. The peeling was getting a bit of a pain the the bum. We just tested a side by side comparison of a gin sour with superjuice, and one with just water mixed with citric acid, and lemon compound for flavour. The taste is almost identical. Any of you guys using this kind of style of "superjuice"??

@KevisKos, Wondering if it is possible to use ISI gourmet siphon instead of Sous Vide? If so how many cartridges and how long should it sit in the siphon? Is it possible to create Cointreau or Grand Marnier using the same method by replacing the lemon with oranges? Love your videos!
You need to try the Oleum Saccharum method with fresh lemon peels. The oils are extracted into the sugar effectively and efficiently. A vaccum sealer provides a leak proof seal, but a ziploc bag with double strips will do the same. Google the method. The super juice method doesn't rely on using the peel, so...?
Great point! Although I still get enough flavors so the liqueur shines with citrusy flavor. Of course, If I would do the direct substitution for the classic limoncello, I would do it differently, but here is just an idea of how to use spent peels. However, thank you for the idea! I will check it out for sure.
ehm there is something called a Clementino out there which is just a Limoncino made with Clementines so it should technically work with Oranges and mandarins
Do you only use organic citrus fruits for recipes using peel? Here in Slovakia (and I presume that in the rest of the EU as well) all citrus fruit not labeled as organic or bio has a warning to not eat the peel because it has been coated with fungicide chemicals to make it last longer.

Why can you use peels that you've already stripped the oils out of. Wouldn't it be weaker? It doesn't make any sense to me

I discovered that shaving off the pith with a knife angled like a razor absolutely does wonders to the peels.

Yuzu (if you can find it) makes a great cello style liqueur. It's like a combination of orange. lime and white grapefruit.

I didn't know the opaque loughe was desired, I got it by steeping at length with everclear no problem. Depends on lemon variety though.
