  • How to make the sweet Hawaiian Bread Rolls?
    Here's what you'll need:
    3½ cup all purpose flour (435g)
    ¼ cup brown sugar (55g)
    2 tsp instant yeast (6g)
    1 tsp salt (5g)
    1 egg
    1 cup pineapple juice (250ml)
    1 tsp vanilla (5ml)
    ¼ cup softened butter (you can use salted or unsalted butter)
    Plus melted butter to brush the bread
    Eggwash: 1egg + 2 tablespoons of milk
    ITALIAN:

    This recipe yields 16 pieces of sweet bread rolls in 9x9"square pan.
    OVEN - Baking time may vary depending on your oven's specification. I'm using a conventional oven which heat rises from the bottom.
    YEAST - Active dry yeast and instant yeast both help leaven bread and provide an airy, light texture, but they do so in slightly different ways and there's one major difference in how you use them: Active dry yeast needs to be dissolved in water before using, while instant yeast can be mixed right into dry ingredients.

    For anyone who doesn't have a stand mixer, this is what I did and they came out perfect - I whisked together the dry ingredients. In a separate bowl I whisked together the wet ingredients - except for the butter. Then I stirred them together as I slowly added the melted butter. Oiled up my hands, kneaded for about a minute and lightly oiled the dough after shaping into a ball. Covered with plastic wrap and set in a warm place for 2 1/2 hours. The next rise, after forming the balls was 1 hour. Pretty much no knead Hawaiian dinner rolls and they came out perfect! :-)

      Thank you! I don't have a standing mixer. I don't buy electrical appliances any more. Everything I can by hand. Getting use to doing that in case SHTF. I can use a woos stove to bake if needed.

    I’ve lived in Hawaii my whole life and I go to RUclips to learn how to make Hawaiian sweet rolls. Sigh!
    Made a small change and used passion fruit purée instead of pineapple juice. Your recipe is spot on and rolls came out fantastic. Mahalo.....

    Made these rolls and they were fantastic, a little less sweet than the supermarket variety here in the US which was actually an improvement IMO. They didn't last one day in my house, my kids devoured them. I'm going to try making hamburger buns next. Reading the comments, a few notes based on my meager baking experience:
    1. The dough is pretty wet compared to non-enriched dough. For working with the dough and shaping it, it was easier for me to lightly oil my hands and bench scraper.
    2. Sweet dough tends to rise slower than non-sweet dough due to the sugar stealing water (or pineapple juice) from the yeast so your rise times may take longer. If you don't get a rise at all, or very weak, then your yeast is probably no longer viable.
    3. I had never used pineapple juice in bread prior to this recipe. I used canned pineapple juice and had no issue with rise or gluten formation. If I were using fresh, I'd probably nuke it to denature any enzymes after reading some of the comments about pineapple enzymes inhibiting gluten formation which I didn't know about.

      Do these rolls rise twice or just once in the pan? What temperature did you cook these at and for how long?

      Yeah, it’s so wet I found the dough completely unworkable. I wouldn’t even call it a dough, I would call it a batter.
      I’ve worked with other enriched doughs with no problem. I’m still in the middle of this recipe, though, so we’ll see how I fare with getting them into balls.

    I tried this recipe and it is a keeper! It had great taste, beautiful soft texture. This is the real deal folks!
    Instead of dinner rolls I formed them into classic buns and they were just as moist.
    I also warmed my pineapple juice to 120F. I've found with yeast breads that you should definitely use a thermometer to check the temp of the liquids. Keep the warmth between 120-130. 👍

      In my experience heating liquid should be between 105 - 110 degrees F otherwise it will kill the yeast. I have had to toss dough because my liquid was too hot.

    Delicious rolls. The first time I did them by hand and they turned out beautiful but I wanted them a little sweeter. The second time I made them I used a stand mixer and added 1 1/2 tbs of sugar. Perfect!

    Hey y'all if you're using active dry yeast instead of instant yeast, I recommend you make a sponge to activate the yeast.
    Take a separate bowl and add 1 cup out of the 3.5 cups of flour
    Then add the entire 1 cup of pineapple juice
    And then add the 2 tsp of yeast and mix well and let sit for around 15 mins
    Once the sponge is ready add it to the mixing bowl and mix until its a smooth ball

      Dry active yeast does not require being bloomed in water. The dough will just require a longer proofing time.

    I just tried this recipe today and it was a hit! My family absolutely loved it that I had to share some rolls with my neighbor. btw, for those who want sweeter bread/rolls, feel free to add more sugar but this recipe gave the right amount of sweetness. This is also amazing with coffee ☕️

    Just a heads up to anyone else trying these that they taste delicious, but mine needed a really long time to rise; the first one took several hours longer than expected, and 30 minutes in a warm place after shaping wasn't nearly enough for the second. They wound up being pretty dense. I'm gonna try again later and give them a lot more time.

      You might have also killed your yest. Salt kills yeast so when you add your salt add it first to your flour then mix it in so your yeast doesn't directly touch it. Also be careful with over kneading your dough if you over work your gluten that's in the flour the end result will be doughy and tough i hope that helps!

      I'm three years late, but also, maybe make sure your yeast is alive by testing a small amount with warm sugar water and seeing if it froths after a few minutes.

    I weighed everything exactly, and measured the juice exactly. At first, adding the wet ingredients to dry, it was very dry so I added just 1 tsp of juice. Then adding 57g of butter (for 1/4 cup) and mixed. I kneaded by hand in the bowl since I don't have a stand mixer, the dough was super wet and sticky to mix, ended up folding with a dough cutter for 15 minutes. Haven't finished yet, will see how things turn out. I don't think I'll try baking this again without having a stand mixer.
    Update: The rolls turned out great. My oven doesn't go by 1 degree F, it's every 5 degrees, so I baked at 355 for 22 minutes. The texture is good even though it was hand kneading, I think a stand mixer will improve it a lot. I see how some people said it's not very sweet, and there's no trace of pineapple, so could be tweaked a little. Final note: It took altogether 6 hours to do, it was fun doing it myself, but I probably won't be making them again for a while. Good video in any case, thank you.

      @@adrianvela no I just did it all by hand and added extra time to the raising until they reached the puffiness I wanted. I whisked the wet and dry ingredients separately - except for the butter. Then I mixed the 2 together. Then slowly added the butter and did a very short knead by hand and let it rise for about 2 and 1/2 hours. Shaped the dough into small rolls and let them rise for 1 hour. Then baked them in the preheated oven and they've come out perfect every single time.

    Tried this recipe and substituted Mango Nectar opposed to Pineapple Juice! Came out amazing 🥰😍. Had Active dry yeast and mixed the Mango Nectar with a cup a the flour and 2 tsps of yeast and let it bloom. Added to the mixture as normal including the remainder ingredients . I’m definitely saving this one ☝️!

    My bread was not rises like your
    The dough was very wet, I added 1/2 TBSP flour more but still wet
    Dough is super sodium, stretching but after 1st N 2 Nd proof the dough were not fully risen, rise40-45% length wide not up
    I followed all your steps , even I let the dough rest longer time but it raised just a little more
    Yeast is new,and still good

      Hi! I had the same problem. I kept adding flour, but it still was extremely sticky and wet. It wouldn't form a dough! I went online and searched what happens if gluten were to react with pineapple, and I found that pineapple is high in bromelain, an enzyme. According to this website, bromelain kills gluten!!

      Basically, the addition of the pineapple juice was doing the opposite effect of what was supposed to happen. The website says to cook the ingredients first because high heat kills enzymes like bromelain. I am assuming that Savor Easy and most other people in the comments used processed pineapple juice, like those found packaged in the market. I don't know if that has to do with anything, but I'm assuming that store-bought pineapple juice has the enzyme already out of it. I used a fresh pineapple, and I didn't cook it or anything.

      Instead of pineapple juice, use apple juice or grape juice. And if you are having difficulty rising the dough, use 1/4 cup of water to proof the yeast, and subtract that amount of water with the juice.

    Do we have to check the dough if it is ready?(like when stretch it wont tear) before we gonna take it out from the mixer?
    Coz i did use the mixer and after 7 mins the dough is not ready yet, it tear apart if i stretch it.

    Something I learned that could save time and materials... Proof your Yeast before adding... just a tip I learned... if your yeast is bad.. then if you had added it , then you wasted time and material... Just Saiyan.... just made this recipe tonight.. waiting for oven to heat up now... thank you for a great recipe...

    My dough were so sticky that I couldn’t make rolls on it. It didn’t even rise, and if it did it’s because i put it inside a slightly warm oven and it rose a bit. I added flour while trying to make rolls, even buttered my hand, still didn’t work. So i ended up, just baking it without forming any rolls. It came out fluffy and sweet and instead of calling it Hawaiian rolls, it became Hawaiian slice. My husband liked it tho.

      Make sure your yeast is not dead. If it’s old or expired yeast it may not rise. You can check by putting a little bit of the yeast into warm water with some sugar and wait and see if it starts to bubble up. Also yeast is technically alive, and works better in warm temperatures for best results. Normally yeast is used with warm water so since you’re substituting the juice for water start with room temperature juice if possible. Also when you’re letting it rise make sure that it’s in a warm place if it’s too cold it will also cause it to not rise.

      I had a problem-cause my bread was not raised hi like your
      Dough is very wet
      I let the dough rest 30-45 minlonger but it raised much
      My dough is very stretched, soft but very wet
      All the ingredients was measured in scal
      Please let me know what I did wrong

    I made these the same extra recipe omg they was so delicious I swear the only thing I would like the a bit more sweeter I want to try with pineapple juice from the can adding 2 more ounces and adding 1 table spoon more of vanilla

      Put a pot of water in the oven with it

    I tried it twice , and both times it turned mushy. I used bottle pineapple juice. Do I have to heat it and cool it and use it. Which juice did you use? I am so upset. All your recipes I use they turn out so good.

      This dough is over hydrated. If you try it again reduce the just to 2/3rds cup then add any additional juice sparingly.

    With all do respect something is not being shown here. Followed this recipe (per weight) exactly. Even own the same mixer. The dough is loose, sticky and unworkable to form into a ball after kneading. Either a step is left out or more flour is added.

    I tried this today 3 1/2 cup of flour and the its only one cup of pineapple 🍍 juice thw butter and egg but I don't know it's not enough to make the dough in good consistency its so dry, I think 3 1/2 cup of flour with 1cup liquid isn't accurate I don't know why my dough is dry, whay I did is I add milk, it taste really good but I didn't achieve that perfect haiwan rolls like in this video.

      i used 3 cups and it wasn't as dry. if it's dry add more liquid little by little because if your dough tears it needs more liquid and knead for longer. see if that helps.

      Microwave the pineapple juice for 2 minutes and let it cool down before using it.

    Best recipe I ever saw but I have a quick question I mistakenly put one stick of butter and it was very sticky I add about a tablespoon of flour more and worrying to know what will happen. Well it came out looking raw 😭😭😭 but smell great ! Could I have fixed it?

    I’m making it and after the first proof, the dough is sticking to my hands. What happened? I used a scale and measured all the ingredients. I have a stand mixer and followed it also.
