Dedication to form and high level mixology is often lost for alcohol free cocktails. Yet you seem to have mastered the craft. No wonder when you were inspired by Existing Conditions. A true tragedy that it closed but you should feel proud to be keeping their craft alive.

Beautiful. Brings a high-production cocktail down to earth one step at a time. I've always thought spherification was a pretentious flourish that wasn't worth the effort, but the method you describe here is so smart, simple, and inexpensive that it makes me want to try it out!

A little tip: if you aren’t going to use them right away, store them in grapefruit juice with a little simple syrup- they taste even better. Thank you so much for your support:)

Hi! Thank you! You can store them in whatever juice you used- they are semipermeable, so if you keep them in water they will lose flavor. They will keep in the refrigerator for a week

Hello and thank you! I always consider the constitution of the liquid in clarifying, like in tomato juice, it’s too much pulp to milk clarify, so I used this boiling method. I also consider allergens and the theme of the drink. If I’m making something vegan, I’ll stay away from milk and try to use an alternative like coconut milk, or agar agar. This cocktail is a recreation of one that I had and I wanted to stick to the ingredients listed on the menu. Since there was no mention of dairy, gelatin or nuts, I decided on these clarifying methods.

🤗 I'm so glad you liked it! Yes it would! That's what ours essentially turned into; we just had the frozen blocks of the puree and let them melt before mixing in the pot with the agar. Let me know if you try it!
Well - I am rather a fan of the new "alcohol free distillates" - juices (even if they are clarified) aren't really a revelation. On the other side, the video is so calm and relaxing, that I have issues to keep my eyes open. I love also the whole production value - well made. No need for watching any meditation videos!
Agar gels at a pretty high temperature, I believe gelatin needs a lower temp to gel. I have yet to experiment much with gelatin outside of the Jell-O shot arena. I wonder if the gelatin is given more time to set in the fridge it might work. The agar was in almost a gel when I was extracting it from the jar.
