Hickory Smoked BBQ Meatloaf

Ingredients:
2 Pounds Ground Beef
1 Pound Ground Pork
3/4 Cup of Panko Bread Crumbs
4-5 Cloves of Garlic, Diced
3/4 Red Onion, Diced
5-6 Green Onions, Diced
2 Eggs, Slightly Beaten
1 1/2 Tablespoons Worcestershire Sauce
1 Shot of Whiskey
1 1/2 Tablespoons Steak Rub of your choice
1/4 Cup of Half & Half
6-8 Ounces of Pepper Jack Cheese
1-2 Pounds of Sliced Bacon
Glaze Recipe:
1 Cup Ketchup
1/2 Cup Packed Brown Sugar
1/2 Cup of Whiskey
2 Tablespoons Steak Rub
Dash of Hot Sauce
Dash of Worcestershire Sauce
Blend Meatloaf Ingredients in large Bowl, being careful not to Over mix, Gently Blend. Layer a Loaf Pan with Plastic Wrap, and fill half way with Meatloaf Mixture. Place long slices of Pepper Jack Cheese in center of Mixture, and continue filling pan until full. Make sure Cheese is completely covered on all sides. Place in Refrigerator for 20-30 Minutes, to allow to cool and firm up.
Mix Glaze Ingredients in a owl. Stir until well blended. Make Bacon Weave as per Instructions in the Video. Place Bacon Weave in Freezer for 20-25 Minutes to Slightly Harden.
Place Meatloaf on edge of Bacon Weave. Glaze Meatloaf with Light Coating of Glaze, and proceed to wrap Meatloaf with Bacon Weave.
Smoke with Hickory Wood for 3-4 Hours, or until Internal Temperature reaches 160 Degrees Fahrenheit.
When Meatloaf reaches 145-150 Degrees Fahrenheit Glaze Meatloaf with remaining Glaze. Allow to Caramelize.
Remove from Smoker and allow to rest for 10- Minutes. Slice and Enjoy!

Ooohhhhhhh yyyyeeeaahh.... Done quite a few of these. Sometimes I use a mix of deer, hamburger, and regular sausage.

Lol Dave. I made this video over 3 years ago. Now I live In the town Chippewa Fall, Wisconsin when the brewery is located, and drink one of their beers quite frequently. Also have visited the Brewery, they make some good beers. Never would have guessed that 3 years ago when I filmed it. Thanks for the comment, as I had forgotten about this beer in this video.

I know this is an older vid but my 2 cents... I have had better luck as far as flavor by sautéing the veggies before mixing the with the rest of the mix. They see to come out more tender as well. Love the idea of the bacon wrap. I will try 2 side by side.. one with a wrap.. on without. Without... one can get a nice crunchy flavorful "bark" on the outside of the meat... but I bet with the bacon.. one can get a nice crunchy smokey outside as well. Looks awesome.. thanks for the vid!

What would be your suggestion if one wants to just bake this in the oven instead?
I would cook at 350 degrees in the oven until it reached an internal temperature of 145-150 degrees. I would guess 45 minutes or so. Thanks for stopping by!

How much pellets do you use, without making it taste like nothing but something that was not in a house fire? I have tried smacking burgers before and they were horrible.
My smoker uses wood chips not pellets. If you are concerned with too much of a smokey flavor use a lighter wood, like apple or cherry. Thanks for stopping by!
Smo'King BBQ Tips & Recipes mine uses chips as well. I have a Masterbuilt electric smoker....just started smoking last year. How many times would I need to fill up my tray to get a not overbearing Smokey taste?
@@bsouthrn Hard question to answer, as it depends on what you are smoking and what wood you are using. Fruit woods like Apple and Cherry are milder, so if in doubt use one of them. Hickory is good, but you can overdue it, so be more careful. Typically I fill the tray a few times minimum and then use your best judgement to see if you need more. Good luck!

@@nealgrenfell2961 Oops… I should have said “… when you are cooking at home.” Although I’m not a chef (per Eric Gephardt, who is a chef, “‘’Chef’ is one of the most over-used words in our industry”), I just finished cooking Thanksgiving dinner for 17 people. I didn’t use gloves although many of my dishes were messy during preparation. I’ll bet you a free lunch at your restaurant that no one will get sick. I washed my hands plenty of times during two days of cooking and they are no worse for the wear.
