The Knives I'm Featuring:
I’ve put my heart and soul into creating a collection of knives for this year’s invitational, each one unique with its own Damasteel pattern and custom handle. Here’s a quick rundown:
1. Chinese Cleaver in Grosserosen™ pattern: Tall and thin grind, perfect for veggies. Crosscut Cocobolo handle with anodized aluminum bolster.
2. Nakiri in Grabak™ pattern: Minimalistic pinch grip bolster, satin finish, Curly Narra wood handle.
3. Kiritsuke in Thor on Damacore® pattern: Polished blade edge with a beautiful Blue-Green Maple Burl handle.
4. Deba in Hugin™ pattern: Thick spine with a right-handed chisel grind. Great for fish heads or as an all-around cleaver.
5. Sujihiki in Forged Drakkar™ pattern: Lightweight, flexible slicer with a handle made from 5,000-year-old Bog Oak.
6. Paring in Vinland™ pattern: Classic 5” paring knife with a Claro Walnut handle and antique brass bolster.
7. Boning in Grabak™ pattern: One-off handle made from Amboyna and Claro Walnut, medium flexibility.
8. Yanagiba in Grosserosen™ pattern: Single-bevel Japanese knife with a Blue Dyed Maple Burl handle.
9. Bread & Brisket Knife in Grabak™ pattern: Perfect for brisket and crusty sourdough, with a Cheesewood handle.
Every single one of these knives is handmade by me, John Phillips, right here in my Knoxville, Tennessee studio. These knives are not just tools - they’re works of art, showcasing the incredible potential of Damasteel®, engineered to handle anything you throw at them while looking absolutely stunning.

are the single bevels really flat? or did you grind a slightly hollow 'uraoshi'? All knives are beautiful nonetheless!
Yes, they are mostly flat. They have roughly a 120" radius uraoshi from the 1 degree platen that I used to grind it on
