Back in the early 80’s I would stop at a little burrito shack right by the famous Rosa’s Cantina Marty Robbins sang about in “El Paso”. They had the very best carnitas burritos (with pico de Gallo salsa)in the world. I think Claudia’s recipe nails it. The place was near Sunland racetrack. It’s name was Easy Bee and I’ll take those memories to the grave! Thank You Claudia. You’re awesome.
I’m from Sunland Park and Rosas Cantina is still there, just not the burrito shack you are mentioning unfortunately, I’m 35 and sadly never ate there but sure have had some drinks at Rosas throughout the years 🤘🏻 Saludos OG
I basically lived at a mexican restaurant for years. They would marinate their pork in the oj, coke, garlic and onion for hours...they would then cook the carnitas in a huge pot in the oven and then fry to order. The marinate gets into the meat vs being diluted by oil. I am sure these are good as well.

I’m hooked on these and that’s exactly the best way to eat them . Literally grab tortillas and just pick up that sweet orange juice meat and I pour that golden lard sauce all over them after I break up the meat and the onions pick up all the flavor as well . This and Birria I can’t stop making

Thank you so much for these recipes. My mama Teresa (aka gma) passed away before I learned a lot of her recipes. One recipe that I miss is her sopes. I saw your sope recipe but my grandma used to dip them in a red salsa, almost like an enchilada sauce then fry them. Are you familiar with sopes like this? Anytime we go to a restaurant they always have the dry sopes and I miss the salsa fried ones sooo badly!

Is lard used to cook tortillas as well? I always see taco stands dip the tortillas in a oil? Any suggestions you'd use Claudia? Like what kind of lard would I need to buy? I'm trying to learn Mexican food recipes. Thanks for sharing another great recipe with us 💜

Fat equals FLAVOR
The amount of lard is irrelevant, it is just a cooking liquid. Just needs to be enough to braise the pork.

Carnitas is such a interesting cooking method, I can’t think of another dish that uses this. It’s one of my faves and this looks great. 😋
French confit is essentially the same process, mostly with duck and pork.

FYI: Use Mexican Coke, because they use real sugar, not high fructose corn syrup. Great recipe! What do you do with the leftover lard/sauce???
