@@pamelamooney1734 I doubt it. I never have. I just wouldn’t use the really cheap pasta and it shouldn’t be that dark orange. Look for the pasta with longer cook times, around 11 minutes.
The only thing you may want to try (it saves a few seconds) is, reserve some water the pasta cooks in, but when the pasta is done, don't pour the whole pot of pasta into the colander, but just pour the water out, but leave some water in the pot with the pasta, then put that into your hot pan with the oil and garlic (once you do it a couple of times you'll get the knack. One last thing, I swirl the pasta around in the pan for a couple of minutes with the heat on med-low to get that flavor you talked about into the pasta.

Awesome pasta, I'm making it from time to time. Just use more garlic (whole head), sliced thinly, parsley, butter and sprinkle some lemon juice to balance rich flavors. 😋 PS As fas as i understand Italians usually don't drain pasta, they just scoop it from the pot directly. 😊
This is such a delicious dish 😋 My daughter and son in law made this excellent dish. They learn to prepare this dish and other tasty plates at a Italian cooking class. They also added fresh Italian parsley on the side as an option 😃
Well done, the only feedback from Italy is that we don't add cheese to aglio olio e pepperoncini pasta, although it seems to have become popular to add in the US. Apart from that, all perfectly done :)
After trying this spaghetti recipe in store bought pouches, my wife, Vincenzina, and I have been looking for this recipe for some time but I've noticed you cut your garlic fairly big. Isn't that a bit too much when one bites into these large garlic pieces? Your comment would greatly be appreciated.
You can mince the garlic if you prefer, just be sure to not burn it! Slicing the garlic allows more bold flavor. A lot of the garlic flavor gets cooked into the olive oil, so I find it to not be overwhelming.
Pretty much most of all the Mediterranean it’s a lot of oil and they are the healthiest places in the world. Looks at Greece, their food is swimming in it!
If you eat a reasonable portion (suits your calorie and keep you full without overeating)you will be okay+you can't judge a diet without at least a full week of eating realistically

You never add Parmesan to Aglio e Olio.
Save yourself a couple steps/ time and simply remove cooked pasta with tongs - straight from the cooking water -and into the pot.
