I believe that there are two fundamental metaphysical facts underlying the dragons' interest in gold: 1) When Melkor incarnated his spiritual power (will) on Arda, he concentrated most on the element gold. Dragons are also sub-creations based on the incarnation of Melkor's spiritual power. In Tolkien mythology, the soul being a whole causes entanglement (a kind of connection) between the sub-creations created by spiritual incarnation. This is also why dragons are inclined to the element gold. 2) From a theoretical perspective: The emergence of dragons especially after Melkor seized the Silmarils indicates that Melkor may have benefited from the power of the Silmarils in their creation. The spiritual aspect of their existence is a synergy between the Silmarils and Melkor's spiritual incarnation. Since the Silmaril light carries the light of Laurelin in its essence, the spectrum of this light is identical to the spectrum of the element gold. If dragons were created through the Silmarils, their affinity for gold may be based on this nature of creation.
