    I wish they would sell just the bottom part separately, so I could attach it to my existing V60-02...

    Hello Vince! Here's the recipe I've been doing for a few weeks now with the Hario Switch and became my favorite and it's super sweet:
    - Ratio and grinding: 18g to 220g with 32 clicks on Comandante C40. You can go finer such as 16 to 220 with 25 clicks, but I wasn't able yet to find a combination that tastes the same as 18/220/32.
    - Temperature 91C
    - Coffee beans: I'm using a medium roast coffee.
    - Switch closed: pour 36g (always low height), wait 40 seconds, then slowly pour the remaining water in circular motion (same motion as your Single Pour technique), once all water is poured then stir for some 5-10 seconds in circular motion. Now open the switch and keep stirring in same motion for another 5-10 seconds until you begin to see the grains (at which point further stirring doesn't seem to be needed or wouldn't be helpful), then let it drain. Note: as you stir, it's about suspending the grains and not about creating agitation.
    - The end result on the dripper is a nice dome shaped coffee grounds, same as your Single Pour technique.
    The 2 goals or theories with this recipe are 1) bloom is best for extraction, and 2) stall the fall is best for oils extraction. So I tried to combined both ideas in this recipe. Who knows if the bloom is needed, but I thought it would be fun to try :D
    In more detail: it's a mix of your "Stall the Fall" technique but adding a 40s bloom haha and because of the bloom need to drop the coffee grounds first as opposed to water. So in theory, the bloom should make the beans absorb as much water as possible and prepare them to give all their goodness next. Then comes the infusion time (closed switch) which we know is very forgiving. And finally the circular motion stirring is meant to not let the beans descend, so the oils have a clear passage to the bottom of the filter and into the cup (I suppose this is less effective than your water-first technique).

    I've never used a switch. Looks like a person could have fun with it though.
    What's your favorite method for brewing a dark roast?
    I don't usually drink dark roasts, but will probably need to brew some soon at the café.

    Seems similar to a Cleaver. I like to use it like James Hoffman does and fill the dripper with hot water, then add the grounds, let it be for 2-3 mins, then switch-a-roo 😊

    Question: i know you encourage delaying the first drip by bed setup and pouring technique. Specifically, for lighter roast, shallower unpacked divot.
    With the Switch, first drip could be controlled with the... switch.
    Does that mean that for lighter roast, I can maximise water contact time by setting a deep V to saturate the ground even quicker due to more surface, and let the water out later with the switch?

      Yups! That’s exactly how it could work! And after that you can pour down the middle for a faster flow rate to push it all down

    Makes me wonder, will most syphonistas enjoy brewing with V60 "syphon method" and make it daily after knowing about it? I feel like they kind of would do it for the better workflow

      Oh stirring is just for saturation. Also we feel the fines get pushed to the sides cause the heavier stuff sinks first and the lighter goes down later. As for the reason it’s fast, we don’t want to cause over agitation. We just look to make sure everything is balanced and al the crema is uniform in colour!

    I haven't been using any other technique and I had been loving my Switch! I always save a lot of time brewing with your techniques and I always feel like I can drink more with these techniques. I am considering to upgrade my 02 to 03.
    Anyways, since I am used to make light roasts and recently I switched to medium roast coffees had been slightly over-extract with a little dark aftertaste. Should I stop spiral pouring agitation on medium roasts or should I still do it but just once or twice? Or should I just use the 1:11 ratio?

      go with a 1:13 unless you love the stronger flavours. I’m super glad you’re loving the methods, as mediums on the switch you can start the water flow at 15 seconds make sure to pour with high agitation in that time frame to get as much saturated as possible and then just pour down the middle with a quick spiral outwards towards the end to make sure all grinds are submerged!

    I like your videos, you have a compelling presence and obvious passion for coffee, but I’ll share some constructive observations:
    1. For all three methods, users would greatly benefit from seeing the scale. How much coffee, how much water and at what point the switch is activated.
    2. Similar to above, followers at any level will benefit from knowing the time (most scales also show time counting up). An integral part of any pourover or immersion-drip recipe is time - time for bloom (and how many g of water), time of second bloom or initial pour, then final pour and total drawdown time.
    3. You gotta reference grind size. For your “pro” audience, you can talk microns (a $10 Brewler from KRUVE easily measures it). For others, you can use standard comparatives (sand, course salt, table salt etc).

      Also add that there are earlier rivals to the Switch (though I quite like the looks of it), namely the Clever Dripper and the Bonavita immersion-dripper, which I’ve been using for years.

      So i just released the new video on the switch! I’m so sorry I missed this reply, I did see your comment so I did add in the microns measurement to the latest video.
      I try to keep the video real time but I shall have more of a scale view as well next time to show the timings on it. Most of the time when we pour all the water is poured out around 45-60seconds and it’s a 20g-280/300g brews. But I’ll definitely start integrating the scale back in a bit more!

    I'd like to see you break down the advanced technique more, it's very different from the intermediate with only minimal immersion. Also it was very vague what you were saying about know your beans to determine when to open the switch. Know them how? When they're finished de-gasing?

      Hmmm .. that’s a tough question. I think the switch is still the best option IMO. I probably would yeah.

      I'd give the Clever to someone I know who would appreciate it and buy the Switch. Unfortunately, you can't buy just the base though. If Hario started selling just the base I think more people would upgrade their V60 to the Switch.

      The Clever has an important advantage, to me anyway. The Clever can hold well over 400g of water so I can make more coffee at a time.

      @@billpiotter8190 That's true. You _can_ get the same capacity with a Switch, but you'd have to also buy the largest V60 cone, which combined is _a lot more_ expensive than the Clever.

    I just picked up the switch 03 size for 25$ USD, the normal prices I have seen are around 40 dollars. It seems that these have defied inflation in the last year.

    Thanks for another Switch video! I’ve been enjoying the brews made with your Stall the Fall technique paired with a LilyDrip GIO.
    The LilyDrip allows me to grind finer and increase my extraction while still staying close to your recommended 2:00 total brew time. The resulting cup from my Switch 03 is rich and nicely balanced.

    I have the v60 and the aeropress, should I go for the switch next or the kona dripper? I like light roasted fruity or floral coffees

      The switch is just too versatile. The kono is similar to the Mugen we have. It increases draw time even if you use their different filter types. I think overall the most versatile is the switch!

    Hi, so I'm trying to do this 2-step immersion brew, where I add 40% of the water, then the coffee grinds, then I swirl it for 30 seconds then release. After that, I repeat the same procedure with an addition of 60% of the total water. It's all good and well, until I tried the light roasted, washed yirgacheffe, then the dripper just totally clogs up. Like it would take more than 6 mins for the water to go through. If anyone has any idea about why it happens, please help. I'm also stirring a lot during the release, but it doesn't help a lot.

      Swirling causes fines to clog the filter. I suggest stirring instead to prevent it.

      Yeah swirling causes a lot of sinking, the act of stirring is to keep it floating through having a good flow motion, swirling doesn’t have a consistent motion since you move up and down, so the beans sink quickly instead!

      I use that same technique. I haven't had clogging issues. I'm guessing you have more fines clogging the filter. Using his stall the fall method might help, or less agitation as a guess? Please add a comment as to what worked for you. Thx

    1 to 14? Wow, I thought I was being cheap by altering the golden ratio. I always feel like people don't grind fine enough and then use a lot more beans. Just seems wasteful. Turns out I have a piece out of my ninja that I can use like the switch, but without the stable base. I just have to not spill everywhere. I'll be able to try your method and just... Push down on the filter housing to release the water.

      It’s all preferences! Yups! If you like bigger batches the 500 is perfect! You can even swap the 03 onto the switch base!

      This I actually have, it has quite a long draw time still. The mugen naturally has a longer first drip time so it’s less necessary to stop the water flow.
