    I followed this technique yesterday and roasted the cauliflower instead of grilling it. It was excellent. I preheated a sheet pan in the oven until it was piping hot and only then placed the cauliflower. Initially all the residual water dries up and only then does the browning start. I have been looking for a way to overcome the seasoning problem that Dan talks about and this one nails it. In my case only 10 mins in the microwave was enough.

    Sheet tray, separate cauliflower into pieces, cover in Olive Oil and paprika, salt, etc -- 425 F for 40 min -- flip halfway through

    I steam mine beforehand, about 8-10 minutes. Then I use a garam masala spice mix. I spray a bit of oil on the cauliflower then liberally apply the garam masala powder while it fries on the dutch oven. I also add carrots, broccoli, and peas. carrots and broccoli need to be steamed prior as well.

      Try this cut them in small pieces and add olive oil salt and black paper than put them in preheated 400 f or 200 c oven for about 25 minutes to 30 minutes until they are perfectly cooked

      Panch Phoron is another amazing Indian inspired flavour combination for grilled or baked Cauliflower. If you haven't I really recommend you check it out if you like garam masala!

    I love cauliflower and followed this recipe to the letter and found that 14mins in the nuke made it too tender to flip on the grill, it disintegrated. Tried a second time at 7mins and it came out perfect, brown and crispy on the outside yet creamy on the inside. I think the key was shortening the cook time and extending the grill time.

    What a convoluted way of doing something simple. Salt and oil it and pop in air fryer or oven. If you must grill, cut in stakes, par boil or steam it. Hit it with salt after steaming so the salt and pepper sticks. Oil it and grill.
    But if you really want cauliflower to shine, head to you local Indian restaurant and try Gobi (cauliflower) 65.

      @@stevenbeach748 Right you are. However, Ann Marie's comment above pertained to her experience (assumed)... Air FRYING and, as the name implies, is Frying - not baking .... Processing the cauliflower in an Air Fryer is more akin to grilling as opposed to "baking". (Google: Air Fryer Cauliflower ... and check out any of the recipes offered.)
      Since Ann Marie hasn't responded, I'm going to assume she processed them for 6-min. @ 400 deg. F. (after pre-cooking them in a microwave) to attain the degree of crispness obtained from "grilling". Would also suggest pre-heating Air Fryer for at least 3-min.

    I'm curious. I don't have a grill or a microwave. Would steaming work for the par cooking? Then a grill pan for the char?
    Or would roasting be a better option?

      His recipe looks wonderful. I roast cauliflower regularly and it’s delicious. I just chop in smaller pcs olive oil salt and pepper. 425 till nice browning. Set on broil towards end fit extra brown.

    Thank you so much for pronouncing cauliflower correctly. I keep hearing people pronounce it cauleeflower. Wtf? It has never been that pronunciation.

    I usually pick my own cauliflower from a "U pick farm"..are the leaves on the cauliflower useable/tasty?
    How do I cook them if so?

      Leaves are usable. Basic suggestion is to treat them like cabbage, as durable veggie leaves.

      Look up charbroiled vegetables. I love doing it with cauliflower, broccoli and carrots.

    Wouldn't steaming it be safer? I can just visualize fumbling with the edges of the bowl with my thick clumsy potholders, then breaking it.

      That's a Pyrex bowl, borosilicate or soda-lime glass which is safe for very high temperatures. Thermal shock could crack/shatter the bowl but only if you placed the heated bowl on a cold surface or added cold water to it.
      edit: That being said, you absolutely could steam it traditionally instead.

    I like to eat my cauliflower raw. I am not a fan of mushy vegetables. I wonder...can you grill raw cauliflower and get the char and flavor using your technique?

      Absolutely agree with you. This recipe is just too mushy, yuk. This really is an American thing.
      I steam mine for 1 minute to clean them thoroughly and then char grill them.
      Perfect every time.

    I don’t think Dan know what “dissolve” means. If salt and sugar are dissolved in water, then the water should be clear. Probably doesn’t matter for this recipe, however it shouldn’t be called a “solution”.
    Also, I don’t think it’s a good idea to use EVOO for browning on a grill. A quick Maillard reaction (e.g., on a grill) will take place at >350 degrees F, above the smoke point if EVOO. In fact, those grill grates might be closer to 500 degrees. That’s why people typically use a neutral oil with a high smoke point to grill. If you want the flavor of EVOO then use it to baste at the end (which he does).

      75 here today. The benefits of living near the gulf coast. I used to live in upstate NY and would grill even if there was 3 feet of snow on the ground. Sometimes you just gotta grill.

    The most convoluted method of grilling cauliflower that I’ve EVER seen. How about simply tossing the pieces in oil, salting them (the salt will now stick) and grilling them?

    Why remove the leaves? They are edible and delicious. Just remove the outside ones, cut any damaged ends off and leave them on.

    Good grief is cauliflower the only alternative to potatoes? It's lame in the flavor department and all we see are recipes for grilling, bbqing, broiling, mashing, ect, ect. There has to be something out there in vegetable land better than the "big flower".

      @@sandrah7512 I usually just lightly toss the Cauliflower in avocado oil and then bake in the oven, but it takes longer than microwave for sure. Tasty either way!
