Most sushi shops here, are not authentic at all. Would love to experience more authentic Japanese food, as I love the food, culture, language and people so much.
Part of that may be due to modifying a cuisines to suit local taste preferences. Ex: texmex and all the other "fusion" options The restaurant industry is rough and serving 100% authentic can be difficult to get people in the door

Labor costs, rent are also higher so to improve cost structure one gets ordinary vs. higher quality ingredients you may have closer to Japan.
