EASY Summer Salad + Italian Dressing

  • This salad is super easy to make and one everyone will love. The chives really give it a kick of flavor and once it sits in the fridge overnight it tastes even better.
    I adore this salad dressing recipe from A Couple of Cooks:

    My Salad Recipe:
    Lettuce
    Kale
    Carrots
    Cucumbers
    Green Onions
    Tomatoes
    Chives
    Wash and chop lettuce/kale and add to bowl
    Peel carrots and Cucumber and thinly slice
    Chop tomatoes and Green onions
    Chop chives
    Add veggies to salad one a time and mix between adding
    Pour on some dressing and enjoy the taste!

    Adding sunflower seeds and/or croutons and some shredded Parmesan cheese would knock it out of the park! How satisfying to get a majority of your vegetables from your own garden!😊

    That salad dressing would be amazing tossed on some potatoes and carrots, then roasted in the oven, or with a pot roast cooked in a slow cooker! Thank you for sharing this with us and have a blessed day. 😊

    Yum!
    Tip that works for me - I have a large sink and I dump all of the Lettuces in clean sink with just a capful of white vinegar (no taste on lettuce or other veggies). Soak a few minutes, then rinse individually under cool running water. transfer to towel or paper towel!

    The addition of your "special ingredient" to the salad reminded me of when we would have cookouts during the summer and my dad's mother would bring some hamburger patties loaded with "Schnittlauch", the German word for chives. My brother loved the "Schnittlauch burgers", but my dad refused to eat them because the chives were grown by Grandma's neighbor, who let her pets "do their business" as they roamed the yard.

    One of my favorite summer recipes is to peel and slice rounds of salted cucumbers and put em in a wide mouth canning jar. Add Zesty Italian dressing until cukes are covered. It must be the "zesty" Italian.
    Immediately put in refrigerator. Wait until cukes are good and cold so they'll be crisp. I keep a jar going all summer.
    Yum.

    When I make big batches like that I put a couple of paper towels on the top when I am through mixing and seal the lid good and store it upside down in the fridge. It helps keep it fresh and control any excess water.

    As something new and different you can use the pink blooms of the chive plants to flavor white vinegar. The color is a beautiful pink and the vinegar is onion flavored.

    Salad spinners are great for washing up berries too. Load the fruit in the basket that is in the bowl fill it up with water & rinse it off, dump out the bowl of water & spin it dry. :)

    So many similarities in how we clean and prepare our veggies!! With the kale, I will also put the sides together and pull the spine out. That works good for collards as well! One tip I use to cut my greens is to roll them together and do what is called a "chiffon" cut--tiny strips! And you're right--breaking down things (thinner deli meat, smaller tomaters, chopped lettuce, etc.) makes it taste soooo much better!!
    We have a community garden next door and I fully utilize it!! And the herbs in there are my fav!!

    I also chop my salads no matter if I buy it or grow it! I like to add some boiled eggs, chopped broccoli, walnuts, and maybe chicken! Thanks for the dressing recipe! Will try! ❤❤

    Looks really tasty and refreshing , especially for the summer heat . The salad dressing is the perfect topper , although sometimes I choose only olive oil . Good show , Corie .

    Oh wow, that salad is gorgeous! We love to eat such things in this house (though husband is not onion/shallot/scallion lover like I am). I tell you I said out loud "YEAH!" when I saw this bit of your harvest. GOOD JOB!!!!!! We know that is WORK, it's been a ton of work. I reckon you've got one of the hardest parts now accomplished, just figuring out how/what/where in your garden. Going forward, still a lot of work, but not SO much. Congratulations and sincere joy for y'all on this. 🙌🏼 🥕 🥗 🥬 💞 Oh P.S. must add...once a person begins to make homemade salad dressing, never want to go back to store-bought. NO comparison, store-bought starts tasting yuck IMHO.

    Corie, making your own salad dressing is a whole new world. Please consider using fresh garlic, as that is even better. Also, get some Thyme. It's amazing!

    Corie Thank you for sharing your recipe. Thyme is a great herb to grow and has an aroma smell. It can be harvested all year. Thyme is a great tasting herb in soups corn beef hash fish patties made with mashed potato etc. I will try to send you a few recipe if you would be interested. I continue to enjoy your vlogs! 😊❤

    I love how you get the greens as dry as possible and chop everything really small. I despise trying to eat a salad with huge pieces of greens. Beautiful salad Corie.

    It's so nice to eat fresh vegetables that we grow in our gardens. Unfortunately, I have to buy produce from the grocery store that I can't grow because my greens don't like 103-110 degrees weather. Much of our produce comes from Mexico (I live in AZ) so I REALLY wash everything! My parents used to visit in the winter and Dad used to tease me that I wash food like a racoon 🦝 cleans his food. Actually, I wash all fruits and vegetables in white vinegar and water and rinse thoroughly several times. It's pretty disgusting to see what washes off... I do have a very nice herb garden and grow vegetables in my Greenstalk all year long. Thank you for the great videos that you make. God bless.

    You should try cutting the onion leaving the bottom of the onion in the ground and it will regrow into another onion!
