    I’m surprised you didn’t deglaze the pan you cooked the chicken in with the broth to collect all that amazing frond for your stew. It looked delicious Corie, I’m a big parsnip fan. My mom always put them in her beef stew. Congrats on little peanut. So exciting!

      I love root veggies and this stew sounds great. I wonder if shitaki mushrooms would be good in this. Once I’m out of the hospital, rehab, surgery and rehab again, I’m def going to try this.❤

      Roasted vegetables! Great idea for the seasoned parsnips and carrots. Added to your fried in butter chicken this sounds wonderful.

    When I was growing up my mom fried parsnips and now my wife does she had never heard of them. They are so good. We lived on Wesser Creek near the Nanahala River we would go to the neighbors to get them.

    Corie, I really appreciate all of the cooking videos you post. At 62 I’m still learning & I watched your canning deer meat. I’m going to try it. My grandmother canned meat, but I’ve always been afraid it would spoil in the jar. Thanks! You are a good cook.

    I'm definitely going to try this. I love parsnips. Because I can't eat potatoes, I always put parsnips in my beef stew, but I never thought of making a stew featuring parsnips.
    I think some people think they don't like parsnips because they mix them up with turnips. If they were called "sweet white carrots," I bet they'd be more popular. 😄

    I love parsnips! This stew looks tasty. I dice them up with sweet potatoes and red potatoes and oven roast them with olive oil, salt & pepper.
    SO GOOD!

    I haven't had Parsnips since I was a little girl. My Grandma would make them. My Dad and my Grandma liked them, not so much my Mom tho. I remember they were tasty and she had made different dishes with them in it. Have a good weekend.

    I like to combine cooked, mashed parsnips with the mashed potatoes. Parsnips are an acquired taste. They smell perfumy. Once you get past that, they taste great. PS: I love your red kitchen cabinets.

    Ever since I got my electric pressure cooker, it’s the only way I cook rice. My recipe book that came with it calls for the rice:water ratio to be 1:1.5. It cooks perfectly. Your parsnip stew looks delicious.

    Parsnips are delish 😋 In my "root roasts" I'll roast parsnips, carrots, beets, & celery root. You used beef broth with chicken... I do too & also will use chicken broth in beef stews. Something about using the opposite broth from the meat "rounds out" the flavor. 😃 This parsnip stew recipe can be tweaked for vegans by using veggie broth, the chickpeas instead of the chicken, then eaten over rice like you cooked, would be a tasty vegan meal. Wonder if some brown lentils instead of chickpeas would work? Anyway, it looks easy enough to make & I'll try it just like how you shown it with chicken. The way you show & explain it makes it so easy to follow. You know, those red cabinets with the black pull knobs have really grown on me. 😀 Thank you, Corie, & God bless you & your sweet Austin & OliveGirl, Merry Christmas 🎄🦌🌟✨💖

    I agree that the flavor of real good quality butter in cooking is a plus. The flavor adds exceptional taste to the food. Because of the higher burn temperature of olive oil and the low burn level of butter, I sometimes add a little olive oil to the pan with the butter too. Reminds me that browned butter adds the most wonderful flavor to many recipes. Browned gently, not burned on high heat. The part that browns is the milk solids in the butter fat.

    Love this recipe…this is the one I make! I just Pat mine out on the floured board and cut out with a knife or use my biscuit cutter…let it rise about 20 minutes and bake. As you did. I put the rolls in the frig when cooled. When we want a roll, I wrap one in a paper towel and wet my hands and Pat the towel until lightly wet. Then microwave.for 20 seconds or so.

    You had me at curry and coriander Corie❤ I had a Hungarian neighbour and she taught me a chicken soup recipe that’s made like this except it has noodles and chicken broth but they always use parsnips .Def going to add this to the evening dinner rotation as I just love those spices esp on cold winter days .Yum!

    I enjoy parsnips but never make them. Will have to try this recipe it looks delicious. I have the same Visionware glass pot that I have had at least 40 years. I always had trouble with things sticking to the bottom and burning! Now I use when canning. But watching you I just might get it out again and try keeping lots of liquid in bottom!     My paternal grandmother loved parsnips, but she lived across country from where I was raised. I don't think I have ever tried them. Your stew looks hearty & great for the cold weather and unusual! I will have to try this :). I love Texmati rice and eat more rice than potatoes or pasta. Thank you. Blessings to you and Austin

    I love that pot!!! Gonna have to get me one! I just got my Christmas present early from mama- a 12 qt gumbo pot I couldn’t be happier with! We never wait till Christmas for gifts.. it’s too exciting lol gonna make a big gumbo with potato salad tomorrow for friends!

    This looks like a great recipe for my allergy diet! I reacted to a lot of foods, but all these I tested negative to (except they didn't test me for an allergy to parsnips), and I'm going to buy some parsnips the next time I go to the grocery store so I can make this stew. I don't think I've ever eaten parsnips. Thanks for sharing it!

    This looks really good! Nice to have on a cool day at this time of year when the weather is cooling down. Love the "visions" pot you used in this video. I have the same one and I love using it for a number of recipes that I usually fix during the cooler months of the year. It's great for a pot of soup or chili on a cool fall or winter day.     This was sooo good!!! We had it tonight with some bread I'd made. I added extra chicken and broth, so I doubled the spices because I stretched it a bit. It will be in my winter rotation for sure! I feel so satisfied, but it isn't heavy, and very healthy! Thank you for the recipe!

    Hey Corey that was a delightful video , and an intriguing recipe because I actually don't think I've ever had parsnips but I do like dishes with curry so shore looking forward to giving that recipe a try.     That looks very good! I think quite a few people bake their parsnips also. I'm going to try them. I love rice! I've been making rice with lime and cilantro, very tasty!

    That looks really great, Corie, I like the pop of curry in there to give it a little something different. Will serve it with basmati rice too, as that is also my favorite rice. You and I have similar tastes in food, with exception maybe IIRC that you don't love chocolate chip cookies (which like Austin teased long ago, make you weird!!! lololol).     I’ve never tried parsnips but might have to..your stew looks delicious…I have an electric pressure cooker but it’s a Ninja Foodi…I love using it, I cook my potatoes for mashed potatoes in it, I do boiled eggs in it often because we like to have eggs on hand for a quick protein snack & I love making egg salad…actually made it this morning ❤

    Great recipe, I can’t wait to try it! I love the Instantpot for rice too, and dried beans, soooo much faster. I was scared of it at first, but once I learned how to use it, the Instantpot has become a kitchen essential! Blessings to you and your family ❤
