I hadn’t tried them until a few years back and they are a lovely and unique ingredient. They are super bright and zesty tasting. They are also great roasted with some EVOO, then topped with fresh dill, flakey salt and pepper. 💖🙏🕊

Looks delicious! I love to whip boiled parsnips in the stand mixer with butter and a little but of heavy cream. Would this soup freeze well? Perhaps before the cream is added?

I make the best parsnip and apple soup, you need to fry the veg off for a good 10 to 15 mins to get some colour, it always makes it great
