Coconut Cream Pumpkin Soup with Lobster and Wild Mushrooms

  • Pumpkins aren't just for display or carving jack o' lanterns, they make amazing soup too. This is one of my favorite pumpkin soup recipes I hope you will try. It's even more special serving it to family and friends inside a baked pumpkin like this.
    I don’t use canned pumpkin so It takes a little more time, but don’t let that put you off trying it. It’s also packed with immune-boosting benefits too, ginger and turmeric. Which means it’s a great option for cold and flu season.
    The earliest versions of pumpkin dishes were actually pumpkin shells that had been cleaned out and filled with ginger-spiced milk, then roasted by the fire. Delicious coconut milk pumpkin soup with sautéed chanterelle mushrooms and poached lobster - get me a spoon!

    Coconut Cream Pumpkin Soup with
    Chanterelle Mushrooms and Lobster
    Makes 4 portions
    2 lb peeled, cubed Pie pumpkin
    2 TBS olive oil
    ½ tsp salt
    1 medium onion, rough chopped
    1 TBS turmeric
    1 TBS minced garlic
    1 TBS chopped fresh ginger
    2 TBS flour
    2 TBS oil
    ¼ tspalt
    1 cup coconut milk
    1 qt chicken broth
    ½ cup cooked lobster (optional)
    1 cup chanterelle mushrooms, sauteed in olive oil (optional)
    2 TBS coconut cream (optional)
    1 tsp chives, chopped (optional)
    1 fairytale pumpkin (optional)
    If using, cut a 1/3 circumference around the fairytale pumpkin and remove the seeds from both pieces. Drizzle with oil and bake 400 degrees F for about 45 minutes.
    Toss the pie pumpkin with salt and olive oil and bake for about 25 minutes until tender 400 degrees F.
    In a large pot, add 2 TBS olive oil, the onion, turmeric, garlic, and salt. Sauté until the onion is soft and translucent. Stir in the flour and the broth. Bring to a boil and then simmer for 10 minutes.
    Add the pumpkin to a blender along with the onion broth. Blend until smooth and creamy. Whisk in the coconut cream and season the soup with salt and pepper. Add more broth for consistency. Serve and garnish with the coconut cream and chives.

    I make an old Native American stew that is called Three Sisters Stew. The Three Sisters of Native American food are corn, beans, and squash. When growing together, they complement one another providing nourishment, protection, and support for each other. Around this time of year, I will use pumpkin as the squash and cook it in broth with beans and hominy. I can make it vegetarian or with meat where I prefer to use turkey, which is traditional.

    A favorite autumn dish here is your favorite beef stew (onions, carrot, celery, bay, thyme potatoes etc.) cooked up, and poured into a cleaned-out pumpkin. The whole thing placed into a 375F oven for an hour or so, then placed on a platter and taken to the table. Serve the stew at table, scraping the ladle against the sides of the pumpkin (to add it to the stew). Beautiful presentation, wonderful stew with roasted pumpkin!

    Just when I all but gave up on seeing a new video from Darren the chef, he reappears with a recipe fit for a QUEEN!!!! Wow!!! That looks very nice! So, I sit eating Belgium tea biscuits as I watch this fabulous dish unfold. Good to see you again!
    P. S. I always make sure I am eating while watching chefs share their artistry.

      Things are starting to open back up,, so I hope he doesn't have as much free time to make videos and is instead, getting his catering business back up and humming. I consider any video we get from him a treat, and this was no exception. If they aren't posted as frequently as they were during last year's lockdowns and quarantine orders, that's okay. As long as we get to share in the recipes, I'm totally good. I do miss Winston as a part of the dialogue though, even if it's a bit one-sided.

    I remember Darren's "Eating Royally" book and loved how quintessentially English it was. It's so interesting to see how he's added quintessential American flavors to his repertoire. Darren should tell the story of when his young daughter came home from school with a drawing of a turkey made with an outline of her hand. That is an American Thanksgiving experience.

    This looks incredible. If I where to make it I would use chanterelle mushroom, shrimp and Hokkaido pumpkin.
    Shrimp is purely for saving money.

    I make butternut squash soup a lot in the fall & winter. I cut up onion, peeled and chopped butternut squash and place them in a pan. Sprinkling of curry powder, turmeric, salt and pepper and just cover with a chicken stock. Boil til tender and that evaporates just the right amount of liquid. Using an immersion blender til smooth. I either stir in cream or add butter and cream to my bowl. Seriously the best.

    Looks really delicious! A great indulgence with that poached lobster as well! Thanks for the tips regarding cutting sugar pie pumpkins. I've always wanted to make a pumpkin dish with a fresh pumpkin. And you've got a savory version which is good! I may be better at sweets, but I like to try my hand at savory too.

    I love that pumpkin soup. Cubans eat pumpkin regularly, it's a normal part of dinner occasionally. We use the larger ones, about 10 or 12 inches high and cut out a slice or two, cut it in pieces so they'll fit in the pot and simply just boil it till it's tender.
    Then serve plain or with olive oil and enjoy with the rest of the dinner. Why do you call the large one "fairy tale" ?

    My word! What a wonderful combination of flavours, lobster with pumpkin, wow! Pumpkin in Australia is still an everyday delicious vegetable, also baked in foil with garlic butter on the BBQ. We don’t have it canned or baked in pies with an overload of spices - can you even taste the pumpkin? - so I can’t comment on that… but this soup…ticks all the boxes for me! Thanks, Darren x

    Okay!! I finally finished this! It’s sooo good! I couldn’t find any ginger root or turmeric at my local store so I had to use the powdered versions… I don’t know how much that effects the flavor but it was still really really yummy! I would definitely reccomend this recipe!

    I've made many a pumpkin or winter squash soup by roasting the flesh, and mashing the pumpkin, then mixing it with cream and some broth, and it's wonderful served in heavy rye bread bowls!
    Darren, your version looks absolutely delicious and so very special.
    I think I'm definitely going to look for some fairy tail pumpkin the next time I get them. That looked so delicious.
