  • Full written recipe for Sindhi Kadhi
    Prep time: 10-15 minutes
    Cooking time: 35-40 minutes
    Serves: 4-5 people
    Ingredients:
    OIL | तेल 4 TBSP (1 LADLE)
    CUMIN SEEDS | जीरा 1 TSP
    MUSTARD SEEDS | राई 1 TSP
    FENUGREEK SEEDS | मेथी के बीज ½ TSP
    ASAFOETIDA | हींग ¼ TSP
    GRAM FLOUR | बेसन 8 TBSP (2 LADLES)
    CURRY LEAVES | कड़ी पत्ता 1 SPRIG
    HOT WATER | गरम पानी 2 LITRE (APPROXIMATELY)
    SALT | नमक TO TASTE
    TURMERIC POWDER | हल्दी पाउडर ½ TSP
    KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TSP
    GINGER | अदरक 2 TSP (CHOPPED)
    GREEN CHILLI | हरी मिर्च 2 NO. (SLIT)
    TOMATO | टमाटर 3 NOS. (PUREE)
    DRUMSTICK | सहजन 1 NO. (PEELED & CUT)
    CLUSTER BEANS | ग्वार ½ CUP
    POTATO | आलू 3 NOS. (QUARTERS)
    OIL | तेल 1 TBSP
    LADY FINGER | भिंडी 10-12 NOS.
    SALT | नमक IF REQUIRED
    TAMARIND PULP | इमली का पल्प 2 TBSP (OR AS REQUIRED)
    Method:
    Set a stock pot over high heat & once it gets hot add in the oil & heat it well.
    Once the oil gets hot add cumin seeds, mustard seeds, fenugreek seeds & asafoetida stir well.
    Further add the gram flour, stir & cook over low flame until the gram flour turns biscuity in colour, make sure you keep stirring continuously.
    Once the gram flour turns biscuity, add curry leaves, once they crackle add hot water & stir, make sure no lumps remain.
    Then add the remaining water along with salt, turmeric powder, kashmiri red chilli powder, ginger, green chilli, tomato puree, stir well & bring the kadhi to a boil.
    Once the kadhi comes to a boil add drumstick, cluster beans & potatoes, cover & cook the kadhi for 10-12 mins over medium low flame.
    While th kadhi is cooking, set a pan over high heat, add oil into it & once the oil gets hot add the lady finger & fry them over medium high flame for 3-4 mins then transfe then into a bowl.
    Then set the pan back on flame & add the cut brinjals, fry them similarly & transfer them into a bowl.
    After cooking the kadhi for 10-12 mins remove the lid & add the fried lady finger & brinjals, stir well & continue to cook it for 10-15 more minutes.
    Once cooked, check the potato for it’s doneness, it should be cooked, if not then continue to cook until the potatoes become soft.
    Taste at this stage & adjust salt as required along with tamarind pulp, stir well.
    Your delicious & wholesome Sindhu kadhi is ready.

    My grand parents migrated from shikarpur sindh, Pakistan during partition. Dadi frequently prepared sindhi Kari and believe me I can't describe the taste in words. Great recipe ...we punjabis like it immensely.

    How close this recipe is to the sambar! This is how similar Indian cuisines are with slight modifications and differences depending on the cultural differences, and availability of resources! Never knew Sindhi Kadhi existed before watching this video! Also, there are many similarities between Dahi ki Kadhi and majjige huli from Karnataka!

    Being a sindhi , overwhelmed that you brought the recipe in the most authentic style. At my home we prepare exactly same style except tomatoes are not used, only tamarind pulp.     Never tried Sindhi kadi.
    I will surely make this for my parents.
    Also my mum makes kadhi almost similar to this, its thick due to some flour, with veggies like bhendi, drumsticks, tomato. We just call it Kadhi and it just tastes amazing.!

    Nice reciepe!!! I am a sindhi and we don’t use tomatoes in our kadhi. We use tamarind pulp and kukum for the taste. Only thing I have learnt from my mom is she puts an oil takda at last with rai and kadhi leaves. This enhances the taste a lot. And yes as you said the sipri adds more flavour. We at home have sipri of all sizes😅

    Hello Chef.. I’m a Sindhi.. I do make this recipe. The only difference is that when I stir besan to golden colour, at that time I put haldi, red chilli and grated tomatoes.. Then I let the tomatoes cook and leave oil. After that I add hot water and vegetables as per their cooking time. Drumsticks I add towards the end as it doesn’t take much time to cook. Nevertheless as you said each house has it’s own recipe.. totally agree with you 😊 Tysm for bringing Sindhi Kadhi to YFL✨👌

    I read all the comments above while watching your video. You're right when you say that there are different variations to this curry. My mom trained me by making me memorize Jeero (jeera)Hurbo (methi Dana)Hing to start the curry with. I don't fry any of the veggies just time when I place them in. like potatoes go in first with drumsticks until half done then gavar until that is half done, then bhindi and carrots. And only tamarind pulp to sour the curry. I do add ginger and some sugar to balance the flavors. Potatoes, bhindi, drumsticks, gavar, and carrots are staples...occasionally I add boiled Kamal kakri(Lotus root ) too.
    Always served with steamed rice and meethi bhoondi❤

    In our homes, My mom makes it mostly in a similar way except for the fact that we don’t fry the veggies at all & directly add them.
    Apart from that - My mom adds the following compulsorily:
    - Arbi (Kachalu)
    - Kaddu
    - Phool Gobhi
    - Mutter (Peas)
    - French Beans
    - Lotus Stems
    The qty of besan is slightly less as I like the Tomatoes to dominate.
    Also, instead of directly purée-ing the tomatoes, we first boil them, peel them & then add them to densify the taste even further!

    My mom, also fries bengan and bhindi separately and add just before impli and dont cook it for long time like 15minutes.
    We add Beh (lotus root) as well

    I am Sindhi and loved your recipe of Sindhi kadhi you discribed very well… I also use “sipri” to make this kadhi. Only difference is I use chopped tomatoes instead of tomato purée and uses veggie like cauliflower Chawla and green peas also it is my most favorite dish I have tried so many Sindhi kadhi recipes this one I am gonna try sure this time thank you for this recipe….

    Thank you for representing our community, Sindhi curry it's not just a curry it's an emotion. Sindhi kadhi is like a simpler version of South Indian Sambhar ..In sambhar we use toor dal instead of besan and instead of garam masala we use homemade sambhar powder. That's the only difference...I saw first time this kadhi recipe... going to make early morning in my Breakfast and have it with roti or Green tea of Planet Ayurveda ...looking yummy

    Wow lovely recipe chef.. I am a Sindhi.. I love kadhi chaval with aloo tuk & mithi boondi.. It is our Sunday comfort food…My mom would make it with wheat flour instead of besan since my dad wouldn’t eat besan as it would give him acidity..This was my mom’s creation & I have still kept up her creative recipe..I do make it sometimes with besan and I want you to try it with atta..❤

    I made it today, exactly as per this recipe. Needed only a lil tamarind as tomato puree made it sour enough
    Next time I'll probably eliminate tamarind completely
    Very delicious with plain white rice ,pickle ,papad.

    I am Gujrati but have learnt from a kutchchhi frnd.. Mung ka stock pani k jagah aur khatash ki jagah imly dal kar baki sabji Suran aur Arbi k sath gavar , fansi, bhindi, sahjan , aaloo is must must👌👌👌👌👌👌turns out superb when little gadhi with paratha or with rice , its wholesome 😋 food.

    Amazing recipe chef. Sindhi kadhi is my childhood dish. We use to relish it every Sunday for lunch i our joint family. Now i cook in my house my daughter enjoys it. ❤Only change is we dont add tomato we use to cooked Toor dal and besan ... but yummm . Maza agaya.

    देखकर ही एक पारंपारिक स्वादिष्ट की महक यहा तक पहुची लग रहा.वैसे अनेक परिचित परिवारो मे खाने का अवसर मिला.और बहुत अच्छी लगती है.दाल पकवान भी खाए है वह भी अच
    मस्त हटके होती है.लेकिन घर मे बनाने इसके मसाले और,इसे काढने का अंतर रह जाता है जिससे यह वैसी नही बन पाती.पर अब आपसे समक्ष मे प्रोसेस सीखकर काफी समझ पाए है तो जरूर बनाकर देखेंगे.हमारी वाली तो घी कढीपत्ते की छौक वाली बहुत सौम्य होती है,आपको पता है मसाले अलग व नाममात्र के गिने चुने लिये जाते है..

    I am aSindhi , married to Guju. Sindhi curry is my favourite 😋I had forgotten to make sindhi curry and make Dal dhokli😀. But you have refreshed my memories of curry by cooking it in my favourite vessel Sipri 😍Thankyou so much chef for this yummy recipe 😇

    Very well prepared . I am not Sindhi but learned this kadhi from my Sindhi friend. Exactly the same way. Eaten with rice and tuk tuk ( double fried potatoes)

      Preet ganwani ji since Tindas are not easily available, so we use Dudhi (Bottle gourd ) instead of that and I love Brinjal & Lotus root in curry.

    In our family, both at my mothers and in laws, we make kadhi with tur dal . A little besan( about ) 1 tbspn is added only for texture. We don't use brinjal. But your version too looks yummy!thx for sharing!

    I am a sindhi and the sindhi kadhi recipe you shared is exactly what we make in my inlaws home.....but at my mom's house everything is same except we boil lots of tomatoes approximately 8 large and red tomatoes,puree them and strain and then add to the kadhi.....that too is very yummy ....no need to add tamarind or kokum....it has lovely color ....I am a great fan of your recipes and religiously follow YFL....Stay Blessed

    This dish is very different from the South Indian sambar. Just like you mentioned we have our own sambar powder recipe at each household and that makes it super special. Thanks for sharing your recipe and I cannot wait to make it at home :)

    Thank you so much chef sanjyot for sharing our delicacy my super yummy favourite kadi chawal. Co incidence I prepared this today only and saw your post. Yes I have added suran and locky rest was ditto. I learned this from sadi she always gave tadka of lal mirch at the end. And one more change in our recepie is we use nimbu ke phool for khatai. That taste has amazing. Well thanks you so very much.

    My parents stay in Ulhasnagar from childhood my neighbours make yummy Sindhi kadi & with red caramel rice it's so yummy.
    Same vessel but don't put Rai,hing, curry leaves rest all same.But no one can beat her taste.
