    Today’s dish is dasima kalguksu with a naturally seasoned flavor.
    The broth is amazing!

    Dasima kalguksu (noodle soup with kelp)
    [Ingredients]
    * Kelp broth (about 4 servings)
    54g dried kelp
    15 cups (2700g) water
    * Dasima kalguksu (about 2 servings)
    6 cups (1100g) kelp broth
    225g kalguksu noodles
    3/5 tbsp (3g) anchovy powder
    1 tbsp (10g) soup soy sauce
    2.5g coarse salt
    1/5 (70g) zucchini or summer squash
    1/6 (48g) carrot
    1/3 (54g) potato
    1/4 (70g) onion
    2/3 cups (40g) green onion
    2 (20g) Cheongyang peppers
    80g shredded kelp
    Ground sesame seeds
    Black pepper
    [Directions]
    * Kelp broth
    1. Soak dried kelp in water for about 5 minutes in a large bowl.
    * Dasima kalguksu
    1. Prepare the kelp broth, remove guts of dried anchovy and then finely grind in a food processor.
    2. Julienne the zucchini, potato, carrot, and onion into 0.4cm thick and 7cm long pieces.
    3. Finely chop the green onion and Cheongyang peppers.
    4. Rinse the soaked kelp once, roll it up, and slice thinly lengthwise.
    5. Put the kalguksu noodles in a strainer, untangle the noodles, and lightly rinse under cold water.
    6. Put the kelp broth, soup soy sauce, anchovy powder, kalguksu noodles, and shredded kelp in a pot.
    7. Once it starts boiling, put in the potato, carrot, and onion.
    8. Season with coarse salt.
    9. When the potato is half-cooked, put in the zucchini.
    10. When the kalguksu noodles are almost cooked, put in the Cheongyang peppers and green onion.
    11. Place the kalguksu in a bowl and finish by sprinkling some ground sesame seeds and black pepper.
