  • This is a sweet and delicious cake made to commemorate the visit of Russian ballerina Anna Pavlova to Australia more than 100 years ago. What a great ballerina she would have made her commemorative cake for her.
    Ingredients
    =====================
    5 egg whites (Large size)
    1 cup of sugar (240ml, 200g)
    1 tablespoon of corn/potato starch (15ml, 10g)
    1 teaspoon of vinegar (5ml, 5g)
    170 (340F) preheated, at 100 (210F)degrees convection for 90 minutes
    whipped cream ingredients
    ===============
    600ml thickened cream
    4 tablespoons of sugar (60ml, 50g)
    topping fruit
    ==========
    Strawberry
    Blueberries
    Passion Fruit
    *** Add your favourite seasonal fruits.
