- Quick and easy Ampalaya con Carne recipe. This dish combines the slightly bitter taste ampalaya with strips of tender beef cooked in soy-based thick sauce.
INGREDIENTS:
- 500g beef brisket, sliced into thin strips
- 3 tablespoons soy sauce
- ground black pepper, to taste
- cooking oil
- 1 tablespoon cornstarch
- 3 large bitter melon ( ampalaya ), sliced into desired thickness
- 2 teaspoons salt
- water
- cooking oil
- 3 cloves garlic, peeled and crushed
- 1 medium size onion, peeled and sliced
- 1 tablespoon cornstarch dissolved in 2 tablespoons water, for the slurry
FOR THE SAUCE:
- 1 cup water
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce, adjust as needed
- 2 teaspoons brown sugar
- sesame oil, a few drops
Tips:
To reduce bitterness of ampalaya, try soaking the sliced ampalaya in salted water for 15 to 20 minutes, then wash it with tap water and drain.

Timing kasi may ampalaya ako! Thanks for the tip on soaking the ampalaya first in water with salt for 15mins to lessen the bitter taste, draining it then halfway cooking in oil before mixing it together with the precooked sliced beef. Sounds good to try! 😊
You’re welcome, Ruby! Soaking the bitter melon in a salt solution will remove much of the bitterness and will make them much more palatable specially for the kids.
