Vegetarian Ramen with Tofu and Shiitake Mushrooms

  • Ingredients:
    Ramen noodles
    Vegetable broth
    Soy sauce
    Sesame oil
    Sliced tofu
    Sliced shiitake mushrooms
    Soft-boiled egg (optional)
    Bok choy or spinach
    Sliced green onions
    Nori (seaweed)
    Instructions:
    Cook ramen noodles according to package instructions.
    In a pot, heat vegetable broth and season with soy sauce and sesame oil to taste.
    Add sliced tofu and shiitake mushrooms to the broth and simmer until heated through.
    Divide cooked noodles into serving bowls and ladle hot broth with tofu and mushrooms over them.
    Top with soft-boiled egg (if using), bok choy or spinach, sliced green onions, and nori.
    Serve hot and enjoy!
