As mentioned by Joel, the pumpkin in this recipe has been cooked and puréed. I don’t know if Ella has a recipe on her website but if not, you can find tons of recipes on RUclips on how to make puréed pumpkin. It’s pretty easy. Or, you can always buy canned pumpkin purée. Make sure the label says “PURE” otherwise, you’ll end up with one that already has additional spices and you don’t want that in this particular recipe. Hope that helps.
I’d love to make this and could go out and buy mascarpone but I have cream cheese in my fridge! Do you think the mascarpone makes a big difference in the flavor?
Well, Mascarpone cheese has a higher fat content and a soft, looser texture than cream cheese; the flavor is more subtle. Whereas Cream cheese is firmer and packs more of a flavor punch. I think, if you add the cream cheese, it may add more of a cheesecake flavor but still moussey from the heavy whip cream. I say go for it and experiment! I think it’ll be delicious. ☺️ P.S. If you make this, comment how it turned out! I love these desserts. ❤️
It also depends on the pumpkin puree ..may happen the puree to be more dry or more watery...chocolate also hardens when cool ..that is the reason we use less gelatin for the chocolate mousse

Wonderful cake. Would the pumpkin flavor be more concentrated if the purée were cooked first?
I always make my own pumpkin puree after either steaming or roasting it ...I usually cut it in slices and roast for 45-50 mins at 350F(180C)

No, it’s cooked pumpkin that’s you can either mash or process in a food processor until no chunks or lumps remain
