Made this cake and it was AMAZING! I didn't have anything square, so I made it round and it turned out good :). The Ferroro Rocher cake you taught me used to be my specialty....but I have to say this tastes amazing! I think this one has a slight edge over the other one!

I saw something in a patisserie last week, that reminds me a bit of this recipe… the bottom was a pecan crumble, then the praline feuilletine and topped with a dark chocolate ganache.. that was just topped with cakao powder and cacao nibs… it was awesome….

But two of the three parts came out not as I want them to be… the pecan nut crumble (bottom layer) was amazing (even that it wasn’t solid enough) but the praline Feuilletine wasn’t soft/creamy, it was hard in the end… I mean it tasted very nice. But I thought it has to be creams…. And the ganache that I made was a bit too strong for my taste… so I have to try different ingredients next time…. Pecan cacao crumble: any ideas to make it more solid? I used butter and brown sugar, adding crushed pecan nuts and cacao powder… Praline Feuilletine: Maybe I have to increase the amount of praline paste to make it softer after the chocolate cools down…(?) - the receipt that I found was 100g chocolate, 80g praline paste and 85g crepes dentelles…. In your video you use a lot more praline paste and less chocolate…. Ganache: I used 66% callebauts Barry… they have an intense and strong character… I used 120g chocolate, 80g heavy cream, 9g honey and 15g trimoline… the texture/thickness came out great, but I would love to get it a bit less strong/bitter…. Can I mix it up with milk chocolate callebauts, let’s say 90g 66% chocolate and 30g 30% milk chocolate? Any hints are very appreciated!!!! Thanks in advance
