Just made this beautiful cake for Thanksgiving-if you are detail oriented and like devoting yourself to cooking (and I do!) this cake is for you! I adjusted the ingredients to 1.5 the listed size to accommodate my pans (9", and 10") and the increase was perfect. I also skipped the step of removing the cake layer and trimming it off-I added the chocolate and caramel layer directly onto the the walnut cake , thus elminating some steps and dishes without compromising the look or taste.This cake is beautiful and tastes fabulous-looking forward to trying more of your recipes!
@@sunaina15 Hello! I actually used a 9" springform for the base (steps 1-3) and an 8.5" cake pan for the rest of the steps (mousse - onwards) - it was what I already had in the kitchen. I just trimmed the walnut cake by hand - I kinda eyeballed it//cut off the crispiest part of the edge (with all the layers covering it, it doesn't really need to be an absolutely perfect circle - I got as close as I could). Once they've had a chance to cool down a bit, the ganache and the walnut caramel are stiff enough that they shouldn't flow down off the trimmed walnut cake layer. Hope this helps! =)

I didn't have any problems with amounts or shortages - I made entire thing twice (once to test it and once for the real deal) following the recipe pretty much to the letter, and I had more than enough both times. Folks who ran short *may* have poured the glaze on when it was too hot, which would make it run thin - you really do have to let it cool down to the temp she specifies in the instructions (85F/29C). I stuck the bowl in the freezer for about ten minutes and gently stirred it a few times to cool it down faster, but that's my lack of patience. =) Folks who had lumpy glaze probably missed the crucial step at 7:48 - pouring it through a fine mesh strainer before letting it cool! I didn't have an issue with the mousse - IIRC, I lightly stirred the coffee powder into the gelatin and cold water before letting it bloom as specified, which may have helped. I'm honestly not sure, though. I have a stand mixer, not a hand-held, so possibly that smoothed things out a bit.

I made this cake as a surprise for my sister’s birthday and I had troubles with the walnut layer as it was extremely hard ever since I took the caramel out of the heat. When I was waiting for it to cool down I was scared that it will ruin everything because it was going to be even harder if placed in the freezer, so I decided to add 10 maybe 15 ml of extra water in the mixture and place it over low heat for 20-30 seconds while blending smoothly. The consistency was very good after cooling down, the caramel became a little bit darker, but was very tasty! At first it seemed to be a difficult cake to prepare, and I was surprised to see it is not! Everybody LOVED the cake and it was extremely tasty! Thank you for the recipe!
You should be super proud for making this.. it looks gorgeous! It's something you'd find in a high-end bakery or cake shop but you made it in your own home, amazing..

A really incredible receipe. Did it for the birthday of one of my coworker and everyone loved it. The mix of flavor and texture is delightful. The coffee in the mascarpone is a great plus. 10/10 would do it again :)
@@jasminekharkar854 it is sweet indeed but I don't think it's too sweet. In my case I found that the walnut and the coffee bring a good balance and mitigate the sweetness. But it is a fact that one piece is enough to get a full stomach.
@@jasminekharkar854 pretty sure it was my 23 cm (9 inch) pan with removable botttom (don't know how you say that in english :) ) so if I use math to get half the volume it should be somerhing like a 6.36 inch diameter pan so a 6 or 6.5 should do the trick.
