I'm particularly grateful to you for helping to destigmatize the use of FROZEN fish. I love fish, but the cost of buying it fresh is oftentimes too expensive for me. Merry Christmas to you and yours!

My family makes three types of these for Christmas 1 with olive relish and sweet peppers, 1 with smoked salmon and fig jelly, and 1 with potatoes and a garlic cheese sauce.
Love these vids my man. Im not sure how spanish it is, but adding crunched pistache to that manchego is a banger aswell. My 2 cents. Used your recipes a lot lately and my 3yo and 6yo love them. Cheers from a big fan from the Netherlands

Great recipes! My wife and I visited family in Barcelona this past August for 12 days; the first time in about 20 years-although some have visited us in the US, more recently. Her and her family are from Ecuador (but, of course, have Spanish ancestry). Those who live in Spain, moved there nearly 30 years ago for a better life for their children and future generations. It was non-stop food, partying/drinking, 3 trips to different beaches (including Lloret), a drive/visit to Montserrat. I’m not a native Spanish speaker but was a linguist in the US Army. So, I have near- native-level proficiency. However, my wife’s nephew is married to a Spaniard and she has a peculiar accent and speaks very fast. It is not the melodic Spanish most are accustomed to, rather it sounds rough..with a lot of more pharyngeal, uvular, post-aveolar, retro-flex fricatives than a typical Spaniard. I could, honestly, understand Catalan better than her Spanish.
I LOVE garlic. And if you think that, you must have some serious digestive issues. So just to say I´d be waaay more scared to kiss a guy sporting a 1980's nopor actor moustache... 😆
