    INGREDIENTS (2-3 servings):
    1 cup sweet rice flour (Mochiko)
    1 Tbsp sugar
    ½ tsp salt
    1 cup water
    For dusting: roasted soybean powder
    For topping: honey and mixed nuts

    There are a few details I did differently from commonly known recipes on the Internet. I used a rectangular shaped dish instead of a bowl to help it cook more evenly. A silicone lid is easier to handle and safer than plastic wrap with holes. I also used a silicone scraper which is safe for hot food and nonstick. Lastly, greasing the dish makes it considerably stick less without affecting the flavor or texture.
    전자렌지로 인절미 만드는 여러가지 방법을 시도해보고 디테일을 개선해봤어요. 전자렌지 가열방법 특성상 평평하고 낮아야 골고루 가열되기 때문에 사각그릇을 사용했고, 랩으로 씌어서 구멍을 뚫으면 랩이 내려앉거나 뜨거운 김 때문에 위험하기도 해서 이케아 실리콘 뚜껑을 썼습니다. 그릇에 달라붙어서 버리게 되는 부분이 많은게 아까워서, 그릇에 얇게 기름칠을 해봤는데 맛이나 질감에 변화 없이 훨씬 덜 달라붙었어요 (대신에 콩가루가 좀 덜 붙는 단점이 있습니다). 마지막으로 나무나 플라스틱 주걱 대신에 빵 반죽할때 쓰는 실리콘 스크레이퍼를 써봤는데 반죽 치대는게 너무 쉬웠습니다.

    I put the leftovers in the fridge and they were still soft and chewy with a little firmer texture the next day. If you don't have roasted bean powder, use cornstarch to prevent it from sticking and add your favorite toppings.

    Is glutinous rice flour same as sweet rice flour? Can i use that?

      Yes, glutinous rice is also called sweet rice

      Breakfast For One ok! And can I use raw soybean powder and roast it? Because I cant find roasted soybean flour near me.

      @@__elizabeth It is kind of hard to find and there are not a lot of recipes that use them, so making it from scratch could be a good idea. I haven’t done it but seen some videos and posts on the Internet. They roast the soybeans in the oven first and grind them into flour. Try either Kinako Powder or Roasted Soybean Powder as a keyword.

    Hello, I want to try this recipe, but I don't have measure cups, only a kitchen scale. Do you happen to have the measurements in grams? Other recipes I have found also only use cups :(

      I don't have a kitchen scale so I just used an online unit converter.. I am not entirely sure how accurate these are. Hope this helps!

      Some of the alternatives that I have been wanting to try are coconut flakes, crushed sesame seeds, red bean powder and cinnamon sugar.

    Do you know a good online website where I can get the ingredients? I live in a rural place and we don't always have access to all ingredients (some but not a lot even though recently we are growing). 😔

      For the ingredients that are not available from a local grocery store, I usually order from H Mart online or Amazon. I got the roasted soybean powder from Amazon and I think Mochiko is pretty much in every grocery store.

      I haven't tried this recipe in the oven, so I'm not entirely sure. I would guess about 40-50 minutes at 350ºF or a little higher? Rice cakes are usually made by steaming and pounding/kneading glutinous rice, and I would stick to either a steamer or a microwave for this particular recipe.
