Hum simply methi ko dho kar chop karte hain. Usko directly aatey may milate hain. Sath he 2-3 tbsp besan & dry masale - namak haldi, dhaniya, mirchi, heeng powders daltey hain. Kaccha tel add karte hain. Acchey se, methi ko squeeze karte huey, aata goondtey hain. Zarurat pade toh pani add karte hain. Yeh dough thepla ho ya puri, dono ke liye use hota hai. Agar ekdum soft puris/theplas chahiye toh ek bada boiled aalu ko mash kar ke, aatey may add kar dete hain. Agar crispy pasand hai, toh nahi karte aur puri/thepla ko patla beltey hain, slow fire par cook karte hain. Bina aloo wale aatey se, 2 inch breadsticks ya button idlis ki size ke muthiye bhi bana kar travelling may le jatey hain ya ghar may tea time snack jaise khatey hain. Steam nahi karna. Directly garam tel may slow fire par, crispy brown hone tak fry karen. 😋 Badhatey bacchon ko beech-beech may kuch khane ke liye chahiye, specially padtey waqt. Yeh muthiye ek rich in protein snack hai. Yeh bina refrigerate kiye , 1-2 weeks tak aaram se dabba may rakh saktey hain. Gujjus often aise stored muthiye ko various sabzis may add karte hain, jaise ki french beans, Cowpea beans, undhiyu, kofta gravy, lemon rice etc. A multigrain, multi millet aata can also be used for this dough. 😊
