The grainy texture comes because cocoa powder is mixed with the other ingredients and not cocoa beans and because of that the smooth texture is never attained. Traditionally a good quality chocolate is made from cocoa beans which is turned into cocoa liquor and then all these ingredients are mixed into it. The whole mixture is churned for around 24 hours of time and apart from that chocolate is also tempered for that glaze and shine that we see in good quality chocolates. No doubt why India's chocolate game is so weak. The best of chefs do not/ can not display the correct way of making good quality chocolate.

You need to temper your chocolate. Or increase the amount of milk powder.
