Love the business model open only for lunch from Tuesdays to Friday off Saturday Sunday and Monday
Everything is fresh daily, no leftovers, and it's literally run by only two people.
With those types of business hours they have a solid weekend day off, and time to clean, shop, and prep without pressure. Depending on how they shopping clean they can get a whole weekend off on occasions.
And since it's such a well-oiled machine whenever they're ready to get go to the next level, they can.

You're right you have to have at least three people
One to do the cooking and plating, one to take orders, serve tables, and collect money; and a third person to prep tables, clean floors, empty garbage, care for bathrooms and stock inventory.
It's very difficult to handle money and handle food at the same time it's even more difficult to do cleaning and handle food at the same time.
I always feel uncomfortable when I walk into Subway and I see someone cleaning the tables then stop cleaning the tables to go behind the counter to make a sandwich even though they wash their hands dry their hands and wear gloves.
