    If you don’t have the frying batter mix you can use 1 cup flour (4.5 Oz) to 1/2 cup (2 Oz) cornstarch or potato starch, preferably potato starch since it’s more authentic. Just make sure to season the batter with garlic powder, onion powder, salt, black pepper, sugar and paprika powder. I would use about a tablespoon (14 g) of each, but you can customize it to your preferred taste I like adding only a little bit of sugar and more garlic flavor. You can obviously omit anything you don’t want. 😊 I hope this helps! Thank you for appreciating my culture ❤️

    Just made this and damn it's good.
    I kinda followed along with the batter mix sans the onion & garlic powder & gochugaru but added a clove of fresh minced garlic + cajun seasoning instead.
    Didn't have any syrup for the sauce too so I opted for 1/2 cup honey, ended up a bit too sweet for my taste so I'll just adjust that next time.

      It definitely makes a difference, you can try skipping it but I'm afraid the sauce may end up a little to salty 😕

      the point of rice vinegar is to add acidity and it also brings a lot of water with it which loosens the sauce. it has some super light flavor notes that aren't in white vinegar but they would be lost in such a rich sauce anyways (and they are lost in most things). so diluted white vinegar (or other vinegar, like red wine vinegar, sherry vinegar, black vinegar, even balsamic vinegar if u reduce the sugar elsewhere in the recipe) or diluted citrus juice will do just fine
