i do the same with my ground meats but use a chopstick and press down to divide it into 3x3 sections so it's easier to take off portions at a time. Since breaking it apart while frozen is pretty difficult, instead of refreezing after defrosting it.

Is there a way to salvage the frozen wet whole pieces of red meat? I received a lot of frozen steaks and they pretty much all thaw out very wet and are difficult to cook in a pan without too much moisture coming out and steaming the meat. I even take the time to squeeze as much moisture out as I can with a large amount of paper towels, and I still encounter this issue.
Will the aluminum also work to freeze it faster??

Not really. You need to channel the heat into the food with a large area of aluminum. Wrapped around the food you don't really increase the effective area very much.

A couple of additional lesson to this I got from Alton Brown years ago:
First, fully refrigerate the food you want to freeze. The shorter the "thermal trip" something has to make to freezing, the fewer ice crystals it will form. Room temp to freezing will form more ice crystals than fully refrigerated to freezing.
Second, is to defrost in a sink: partially fill the sink with cold water and plug the drain in such a way that a little bit of water drains slowly, then leave the tap running on cold. This way you get the conductivity of the water plus the convection of the moving water around the food. Alternatively I guess you could just put a large bowl in the sink and let the water overflow over the top as the tap is running.

Its better to defrost in the fridge. It takes more time (usually overnight) but you get the best results and its safer healthwise.
I thought defrosting submerged in cold water was always the fastest method.

Defrozting at room tempheratur isn't the best way for conserving cuality. The best way is on the refrigarator.
At room temperature, for example, beef lost like 6% more liquids than doing it on refrigeration.
Or put frozen stuff on your pizza steel to defrost :)
It won't work as well as aluminum but it'll work better than the countertop!
