What great timing! A younger colleague of my husband was just diagnosed with pre diabetes & asked if he could talk to me about how my husband reversed his diabetes. (because I do the research &/the cooking, lol) . I’m going to send him this video, then talk to him about the recipes I collected! Thank you Chef AJ!

Re: Earthing: YES it works! I have neuropathy in my feet & suffered with the pain. I tried several things, but when I used a grounding pad I had the pain level go within minutes (& sometimes seconds) from about a 7 down to a 2. This happened over & over again! The bonus is I’d sleep a deep & well rested sleep. I love my grounding pad!

Also, soaking and/or cooking dried beans with kombu sea vegetable aids in the digestion of beans.

Thank you for repeating this Important message!!
I’ve been hearing a lot from a UK Cardiologist popular on RUclips lately- who says heart disease is a metabolic disease caused by eating too many “carbohydrates “ which cause “ insulin resistance.”
He Fails to explain what he means by “carbohydrates “ in many of the videos I’ve seen and he pushes fish 2x week.
I like how he challenges the Ultra-processed Food industry , but he’s saying eating Saturated Fat is No Problem- and high Total cholesterol and LDL is Not predictive of developing heart disease.
Then at very end of one video- he said he had oats and berries for breakfast. Whew! Thank you both for addressing this confusion!!💜🙏💜🙏

That's white flour products, whole food plant based starch doesn't embrace anything made from flour. Flour is not whole food, it's processed

I've never understood why anyone goes through the hassle of cooking beans...I eat literally every day two servings of beans, mostly black beans, all out of the can and microwaved, organic no added salt. Delicious, especially after I combine with all my spices, potato, steamed veggies, etc. I'll buy non organic if I have to, average about $1/can.

I usually have a bean dish as my appetizer a couple hours before my potatoes.

Whole beans take only 8-10 minutes to cook in a Instapot and they are much cheaper than packaged beans. In addition, the environment isn’t impacted by the waste of the packaging.

Because cooking your own beans is cheap and easy and WAY tastier than canned.

????If I’m monitoring blood sugar responses to food w/ a monitor, what is the biggest spike that should be desirable. Rice almost always brings it to 200 spike. How can you develop more insulin sensitivity?.????

My understanding is you can improve insulin sensitivity by following the low-fat whole plant food diet recommended here, plus exercise, plus time-restricted eating or another form of intermittent fasting. Check out Mastering Diabetes for details. They recommend keeping fat below 15% of calories. I tracked it for myself once, and found it doesn't take much to get over 15%.

Just keep taking insulin. You will see results in days. Eat carbs. No protein, no fat.
