I know, right? I just dont think onions belong in mac and cheese. Maybe im missing out, and onions are great, but they dont have to be in every dish. The food looks awesome. Classic homemade meals with sizeable portions. Here in southern california its all overpriced low quality chain restaurants and fast food places. Half of them just microwave frozen food and charge you 15-20 bucks for the meal. Even the local family owned mediterranean restaurant i worked at was terrible. The owner used to make me scoop up some cooked chicken/beef shwarma stored in large batches, throw some water on it, microwave it, and serve it to customers. I wish i lived over there wherever your restaurant is....
Everybody gives American cheese such a hard time, but I doubt that they know much about actual American cheese. The Kraft singles and squeezy cheese isn't American cheese. It's the infamous "cheese food." I can confirm that American cheese gives things a good flavor. It has a good salty, strong, cheesy flavor.

Ive seen and tasted american cheese, not like rest of the world. When i read the ingredients on the package, it was easy to figured out where the chemical taste came from. Thankfully you can get imported cheese and imported non gmo food from Europe.
Agreed American cheese gets a bad wrap because most think of those plastic Kraft singles that can somehow be labeled as cheese thanks to FDA (51% cheese products = cheese). American cheese from a respected deli or restaurant vendor is basically a milder, more meltable cheddar, no preservatives and no more than 4 ingredients.
