I'd say just pick a subject you want to do and do it! Avoid larger scale stuff as it tends to be much higher detail with more fiddly construction, and gravitate towards ranges like Airfix or Revell's starter set, or Italeri stuff. They have a simplified construction and if you aren't looking to make a super accurate recreation but just something to start off with they're great. As for other advice, invest in a cheap airbrush early and use it until it breaks. The things are amazing and even a cheap one is going to make everything much cleaner and easier.
The decals on this kit is horrible. They are flimsy and white portions just fell apart. I decided to spray three coats of gloss clear topcoat on the decal paper and this prevented the other decals from breaking. Downside is the decals became thicker.
