I just did my first painting with an acrylic underpainting for the first time (normally I'll just use one medium: oil, acrylic gouache etc) and it was very useful and interesting to work with it. You cover the background with an off-tone so that you can see the actual colours you paint over it and how they interact with other colours. Your eye picks it up differently. The old masters also did this to create a rich depth.

Can you use water to dilute an acrylic instead of buying the thinning medium? Just for people who are just starting off
Yes you can. When mixing water with acrylic, just be careful not to use more than 50% water or it can break down the paint.

What if I don't have flow aid.? Can I just use water?
Yes, but not as much as you see me using here. Adding too much water to acrylic paint will break down the paint. Flow aid prevents that break down.
Is flow aid the same as gel medium?
No, it's not. Flow Aid is a specific medium manufactured by Liquitex that is added to your water instead of added directly into your paint.
does it work on a regular canvas (mine is made of cotton I think) too? or only on primed paper? and would it still be possible to paint with oils over it? (I'm sorry, I never tried an underpainting before so it might be a stupid question)
That's not a stupid question at all! Yes, this process with absolutely work on cotton canvas, and you can then paint on it with oil. That's what I typically do - a thin underpainting in acrylic, let it dry overnight, then start on it the next day in oil. You just want to make sure the acrylic is completely dry before you begin your oil painting.
