I live in the UK where we usually can pickles been doing that for many years, eggs, onions beets plus jams but I bought a pressure canner last year, canned ugly chicken and beef oh my changed my outlook on preserving, also bought a good pot to Waterbath can so far apple sauce, pie filling, pasta sauce this year, just waiting for my produce to ripen to get on canning more. I usually can find jars at yardsales to help keep the cost down. I love getting a good price on jars. You're right, never too late! It's sounds like you are doing amazing with canning. 👏

I tried growing and nothing really produced yet like I’ve had in the past so I don’t know if it’s the weather in ks but I do have some romas and hoping my European tomatoes produce more and perhaps next summer I can Can for the first time
@@celestehodge6970 you can use bottled lemon juice. 2 tablespoons for quart and 1 tablespoon for pints. Don't use fresh squeezed lemon juice, you are not guaranteed the right acidity. Only bottled lemon juice gives you that.
Did you freeze before cutting? Cause the knife sounds like it’s going through frozen tomatoes. But, you just blanched them to peel so I’m confused. Also, even if they cook down, you said you don’t want that cause they will be bad. Makes it sound like you need to throw them out if too small, but that just means crushed instead of diced…
No, I did not freeze them. I picked them off my plants that same day or a couple days before. They were very fresh. It might have been the cutting board also. If you cut them too small, you can still use them. I would just use it as a crushed tomato instead. Either way works.

Filtered to boil them in ? You can id you want to, it personal preference.
What do you mean when you say vinegar solution? is it just vinegar or some ratio of vinegar to water?
I just dump about 1/4 cup vinegar into a bowl and add about the same amount of hot water to the bowl when I'm ready to wipe the rims.
